Grated apples in the pound cake make it taste heavenly moist and slightly fruity. Cinnamon gives the bundt cake an aromatic and somewhat spicy note. It’s a similar story with the vegan applesauce cake.

Baking tin alternatives

I baked the cinnamon apple cake in a Ø 20 cm bundt tin, like my vegan coffee nut bundt cake. Alternatively, you can use a different baking tin.

For example, a round springform tin or a small square baking tin is suitable for this. You can also bake the cinnamon apple cake in a loaf tin, just like the chocolate banana bread or the red wine cake.

It is important that you adjust the quantities in the recipe, depending on the size of your baking tin. In addition, the baking time specified in the recipe may be different for you.

The apple bundt cake with cinnamon tastes delicious on its own. However, you can serve it with a scoop of vanilla ice cream, for example plombir. Whipped cream or a caramel sauce also combine perfectly with apples and cinnamon.

The apple bundt cake recipe that you can find here at the end of the post in the recipe box is very simple and quick. Since it’s a pound cake, all you have to do is mix all the ingredients together and put the batter in the oven.

Step 1:

First, mix together the dry ingredients, namely flour, cornstarch and baking powder. Roughly grate the peeled apples.

Now beat soft butter with sugar until creamy, and add eggs one by one. Then add the grated apples and cinnamon.

Now add the flour mixture and mix until you get a thick batter.

Step 2:

Pour the batter into the bundt tin and bake the cinnamon apple cake for about 45 minutes.

Step 3:

After the apple bundt cake has cooled down, dust it with powdered sugar.

  • 250 g apples peeled and cored
  • 180 g butter room warm
  • 130 g sugar
  • 3 eggs
  • 250 g flour
  • 50 g cornstarch
  • 9 g baking powder
  • 1 tsp cinnamon
  • 1 pinch of salt
  • butter to grease the baking tin
  • flour for dusting the baking tin

  • powdered sugar

Instructions
 

  • Grease the bundt tin with butter and dust with flour, tapping off the excess flour.
  • Mix flour with cornstarch and baking powder.
  • Peel and core apples, then weigh them.
  • Grate the apples with a coarse kitchen grater.
  • Beat softened butter, sugar and salt for about 5 minutes until light and fluffy.
  • Add eggs one at a time, beating each time until homogeneous.
  • Add the grated apples as well as cinnamon to the egg butter mixture and mix.
  • Add the flour mixture and mix just briefly to form a thick batter.
  • Pour the batter into the baking tin, smooth it out and bake the cake in a preheated oven at 338 °F (170 °C) for about 45 - 50 minutes.
  • Let the apple bundt cake cool slightly in the baking tin, then carefully turn it out onto a flat plate and let it cool completely.
  • Dust the cinnamon apple cake with powdered sugar.
