This layered apple cake combines a crispy crust with caramelized sugar and nutty almond flakes, a delicate shortcrust pastry bases with sour cream, a light and airy cream sour cream frosting with a tangy note and fruity apple pieces. Special apple layer cake recipe
This apple layer cake is very versatile and special. It has different flavors. The Riga cake, my cream puff cake with cherries and the cake “Damskiy kapriz” are similarly varied.
Cake bases
The cake bases taste heavenly tender and practically melt in the mouth. They consist of a shortcrust pastry, which is also prepared with sour cream.
The cake bases are coated with beaten egg white and sprinkled with sugar before baking, giving them a crispy, caramelized crust. Almond flakes provide a nutty flavor.
Cake frosting
The cake frosting is made from cream and sour cream, just like the filling for the chocolate sponge layer cake and the medovik cake roll. It has both a creamy and airy consistency. The sour cream gives it a tart note.
Apple filling
The filling consists of tender cooked apple pieces. It gives the cake a fruity and slightly sour taste.
Modify as desired

Refining the apple filling
For example, you can add spices to the apple filling. Cinnamon is perfect for this. Apple and cinnamon are a delicious combination, which you may have already tried in my sharlotka with cinnamon and walnut or my apple bundt cake with cinnamon.
Replace nuts
Replace almonds with other nuts to suit your taste. How about chopped hazelnuts or walnuts, for example?

The combination of cream and sour cream in the cake frosting is delicious. You can also use just cream or just sour cream.
Try cake with other fruits
And finally, this cake is not only possible with apples, but also with other fruits. Pickled peaches are ideal for this. Drain them thoroughly first and then cut them into small cubes, just like for the peaches cream cake with yogurt. The cooking step is not necessary in this case.

How to make layered cake with apples: tips and tricks
- You can peel the apples if you don’t like the skin in the cake or if it is too thick on your apples.
- After you have added the cornstarch to the apple mixture, you should definitely heat it up for a while so that the filling doesn’t taste like starch later on.
- The amount of flour specified in the recipe may vary. Only add as much flour to the butter mixture until you have a soft dough.
- Only knead the dough very briefly. The longer you knead it, the stickier it becomes and the more flour it absorbs. This could make the cake bases taste dry and not tender later on.
- Do not leave the cake bases unattended in the oven, as the almond flakes in particular can burn quickly.
- Handle the hot cake bases with care as they are very fragile.
- The cream and sour cream must be cold so that they can be whipped into a firm cake frosting.
- The apple layer cake tastes moderately sweet. If you like it sweeter, you can use more sugar for the apple filling, the frosting and for sprinkling the cake bases before baking.

Apple layer cake with almonds
Ingredients
for the dough
- 250 g butter room warm
- 150 g sugar
- 4 egg yolks
- approx. 500 g flour
- 15 g baking powder
- 1 pinch of ground vanilla bean
- flour for the work surface
additionally for the cake bases
- 4 egg whites
- 60 g sugar (15 g per cake base)
- 80 g flaked almonds (20 g per cake base)
- 1 pinch of salt
for the frosting
- 400 g sour cream cold
- 400 g cream cold
- 30 g powdered sugar
for the apple filling
- 4 apples medium-sized
- 200 ml apple juice
- 30 g sugar
- 30 g cornstarch
Instructions
Preparation of the apple filling
- Dissolve cornstarch in 50 ml apple juice.
- Pour the remaining 150 ml apple juice into a non-stick pan.
- Core apples, cut them into cubes and add them to the apple juice in the pan.
- Add sugar and stir.
- Bring the apple mixture to the boil while stirring and simmer for approx. 1 - 2 minutes until the apples are soft but not mushy.
- Pour in the cornstarch dissolved in apple juice in a thin stream, stirring constantly, and continue to heat the apple mixture for approx. 1 minute, stirring constantly.
- Leave the apple filling to cool.
Preparation of the dough
- Mix flour with baking powder.
- Beat egg yolks, sugar and vanilla to a creamy, light-colored mixture.
- Add softened butter in batches and beat briefly each time to form a homogeneous mixture. Beat for a further 3 - 4 minutes at the end so that it becomes light and creamy.
- Add the flour mixture to the butter mixture in batches and knead briefly and quickly to form a very soft, just barely homogeneous shortcrust dough.
- Cover and chill the dough for approx. 40 minutes.
- Divide the dough into four equal pieces.
- Roll each piece of dough lightly in flour and roll out on a sheet of baking paper until as round as possible and approx. 2 - 3 mm thick. Carefully cut out a Ø 24 cm circle from each rolled-out piece of dough on the baking paper (e.g. using a cake ring).
- Beat the egg whites with salt until stiff and spread the whipped egg whites evenly over the four cake bases.
- Now sprinkle each cake base with 15 g sugar and 20 g flaked almonds.
- First place one of the four cake bases on a baking tray together with baking paper and bake in a preheated oven at 356 °F (180 °C) for approx. 12 minutes until lightly golden brown. Then bake the remaining three cake bases in the same way, one after the other, and leave all four to cool.
- Knead all the leftover dough together, roll it out thinly and bake until golden brown. Leave them to cool and crumble them finely.
Preparation of the frosting
- Place cream, sour cream and powdered sugar in a mixing bowl and whip to a creamy consistency.

- Spread the apple filling evenly over three of the four cake bases.
- Leave approx. 2 tablespoons of frosting for the sides of the cake.
- Spread the remaining frosting over the apple filling on the three cake bases, smooth it out and stack the three cake bases on top of each other.
- Place the fourth cake base on top, spread the sides of the cake wilayersth the frosting and then sprinkle the sides with the crumbs from the leftover dough.
- Chill the apple layer cake for approx. 3 hours.
