This apricot sorbet tastes incredibly fruity, refreshing and light. Vanilla gives it an aromatic note. You can make the apricot sorbet at home without an ice cream maker using just four ingredients. You can find a detailed recipe with the exact quantities and step-by-step instructions below.
Select fruit for apricot sorbet
Use ripe fruit for the apricot sorbet recipe, similar to the mango coconut dessert or the mango sorbet with basil. The apricots should be sweet and aromatic. The taste of the ice cream depends on this.

The sweeter your apricots are, the less sugar you can add. Simply determine the amount according to your taste.
With vanilla or rosemary
I have flavored my apricot sorbet with vanilla. I used ground vanilla bean for this, just like for the fruit salad with yogurt or the raspberry meringue roulade. It gives the sorbet a delicate flavor. Alternatively, you can also use a vanilla pod and scrape out the seeds.
Instead of vanilla, rosemary is also a very good flavoring. It complements the taste of fresh apricots very well. You may have already tried this combination in my apricot rosemary lemonade.
Add a sprig of rosemary to the apricots with sugar after you have brought them to the boil. Once the apricot mixture has cooled, remove the rosemary.
Ensure a creamy and fluffy consistency
This apricot sorbet tastes delicious after freezing. So you can enjoy it straight away.
Or you can give the ice cream a particularly creamy and airy consistency, like the pineapple sorbet. After freezing, put it in a powerful blender piece by piece and blend it briefly. This makes the color of the sorbet a little lighter.

Apricot sorbet with vanilla
Ingredients
- 1 kg apricots
- 100 g sugar
- 3 tbsp lemon juice freshly squeezed
- 1/5 tsp ground vanilla bean
Instructions
- Pit apricots, cut them into large pieces and put them in a saucepan.
- Add sugar and lemon juice and stir.
- Heat the apricot mixture slowly over a low heat, stirring until the sugar has dissolved.
- Bring the mixture to the boil and simmer for approx. 5 - 10 minutes until the apricot pieces are soft.
- Leave the apricot mixture to cool, add vanilla and puree until smooth.
- Transfer the fruit mixture to a freezer-safe container and place in the freezer for about 6 hours until it solidifies, stirring vigorously every 30 minutes for the first 2 hours.
- Leave the apricot sorbet to stand at room temperature for approx. 10 minutes before serving.
- Alternatively: Leave the apricot sorbet to stand at room temperature for approx. 10 minutes, then spoon it into a blender one tablespoon at a time and blend again briefly. This will give the sorbet a creamy, airy consistency and a lighter color.
