With a filling of fresh blueberries, these sweet dumplings are an ideal dessert for warm days. They taste fruity, light, sweet and sour – really summery. So as soon as the blueberry season starts, you should definitely try the sweet vareniki.

Instead of blueberries, you can also fill the sweet dumplings with other fruits of your choice. In summer, in Slavic countries, the most popular are vareniki with strawberries and vareniki with sour cherries. Although I haven’t tried it myself yet, I can imagine that vareniki with raspberries or currants also taste delicious.

For the dough you need only four ingredients, namely
- flour,
- boiling water,
- vegetable oil
- and salt.
And for the filling you need fresh blueberries.
How to make blueberry vareniki: here’s how (Check out the detailed recipe below.)
- First you knead a soft dough from all the ingredients, knead it thoroughly and let it rest briefly at room temperature.
- Now roll out the dough, cut out circles from it, spread blueberries on it and glue each circle into a moon-shaped filled dumpling.
- Boil the vareniki with blueberries in water for about 5 minutes. Done!

- Instead of blueberries, other berries can also be used as a filling for the sweet dumplings.
- Boiling water in the dough ensures that vareniki taste very tender after cooking and do not crack during cooking.

- To prevent your vareniki from sticking together after cooking, you can mix them with a little butter.

Blueberry vareniki
Ingredients
for the dough
- 180 ml boiling water
- 300 g flour
- 20 ml vegetable oil
- 1/2 tsp salt
for the filling
- 250 g blueberries
for cooking
- water
Instructions
- Put flour, salt and vegetable oil in a mixing bowl.
- Pour boiling water over the flour mixture and mix it first with a tablespoon. Once the mixture is no longer hot, knead it into a soft dough with your hands. Knead the dough for about 7 minutes to an elastic consistency and let it rest, covered, at room temperature for 20 minutes.
- Roll out the dough to about 3 mm thick and cut out circles from it, for example with a drinking glass.
- Put some blueberries in the center of each circle.
- Now close each dough circle to a semicircle and glue the edges firmly together.
- Boil water in a saucepan, put the vareniki with blueberries into the boiling water, stir gently and cook for about 5 minutes.
- After that, take the blueberry vareniki out of the water with a slotted spoon and put them on a plate.
Notes
- You can shape vareniki with a vareniza instead of your hands.
