How do I get the fish flavor and aroma?

Quick carrot lox recipe without baking

In many carrot lox recipes, you have to bake the carrots in the oven before you make vegan smoked salmon out of them. This usually takes a few hours. It’s much faster with this recipe, which calls for steaming the carrots for just 10-20 minutes. This not only saves time, but many vitamins from the carrots are not lost. You only need to allow enough time for the carrots to marinade.

Serve the carrot lox

Vegan carrot lox tastes very delicious on baguette. You can serve it as follows:

  1. Cut baguette into slices.
  2. Spread vegan butter or margarine on each slice.
  3. Spread the carrot lox on it.
  4. Now add fresh dill and some fresh onions – delicious!

But the vegan salmon also tastes delicious with normal, especially homemade bread. You can first spread vegan cream cheese on the bread and serve various fresh herbs with the vegan smoked salmon. Capers also go perfectly with it.

The recipe for vegan smoked salmon is quite simple. You need very few ingredients for it. These are

  • carrots, of course (it’s best to take large ones so your “salmon” strips are wide),
  • liquid smoke or smoked salt,
  • nori leaves,
  • vegetable oil,
  • some soy sauce,
  • some rice vinegar (or other vinegar)
  • and possibly sea salt if you use liquid smoke.

How to make carrot lox

  1. Using a peeler, slice carrots lengthwise into thin, long strips. Place steamer insert in a large saucepan with some water or hang a heatproof strainer over it. Place the carrot strips in the steamer insert or colander, place the lid on the saucepan and steam the carrots for about 10 – 20 minutes. They should become soft, but not mushy. Then let cool to warm.
  2. For the marinade, mix vegetable oil, soy sauce, liquid smoke or smoked salt, nori leaf cut into pieces, rice vinegar and sea salt if desired in a large bowl.
  3. Add the warm carrot strips to the marinade and mix gently until all the carrots are coated with the marinade.
  4. Pour the carrot strips along with the marinade into a large screw-top jar, seal, and refrigerate for at least 12 hours. Your vegan smoked salmon is ready!

Vegan lox: with these tips and tricks you will succeed perfectly

  • When steaming the carrots, make sure that they become soft but not mushy. The steaming time specified in the recipe may vary. It also depends on how thinly you cut the carrots.
  • Liquid smoke or smoked salt and nori leaves give the vegan salmon the popular sea and smoke flavor and aroma. So you should not do without these ingredients.
  • Look for good quality liquid smoke and smoked salt. Smoked salt should ideally be sea salt.
  • If you use smoked salt, you don’t need to add sea salt. Unless you like your carrot salmon very salty.
  • Instead of nori leaves, you can use other seaweed to your taste.
  • Instead of rice vinegar, you can use another vinegar.
  • To slice carrots lengthwise into thin, long strips, you’ll need a peeler.
  • To steam the carrots, you’ll need a steamer insert or a heat-resistant strainer.
  • To marinate the carrots, you will also need an airtight container. For example, you can use a large screw-top or canning jar.
  • It is important to seal the carrots well in the marinade and let them marinate for at least 12 hours. This is the only way they will get their sea flavor and smoky aroma.
  • Keep the vegan carrot lox in the same screw-top jar in the marinade. It will keep for about 4 days. You can take out the jar from time to time and shake it gently so that the carrots stay evenly coated with the marinade.

  • 600 g large carrots (cleaned)
  • 1 tbsp liquid smoke or smoked salt
  • 1 nori leaf
  • 50 ml vegetable oil
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • possibly sea salt (if liquid smoke is used)

Instructions
 

  • Using a peeler, cut carrots lengthwise into thin, long strips.
  • Put some water in a large saucepan and place a steamer insert in the saucepan or hang a heat-resistant strainer over the saucepan. Place the carrot strips in the steamer insert or colander, put the lid on the cooking pot, and steam the carrots for about 10 - 20 minutes. They should become soft, but not mushy.   • In a large bowl, mix vegetable oil, soy sauce, liquid smoke or smoked salt, nori leaf cut into pieces, rice vinegar, and sea salt if desired.
  • Add the warm carrot strips to the marinade and mix gently until all the carrots are coated with the marinade.
  • Fill the carrot strips together with the marinade into a large screw jar and close it. Refrigerate for at least 12 hours.

Notes

  • Adjust the steaming time of the carrots if necessary. They should become soft but not mushy.
  • Make sure the liquid smoke and smoked salt are of good quality. Smoked salt should ideally be sea salt.
  • Instead of nori leaves, use other seaweed.
  • Instead of rice vinegar go another vinegar.
    It is important to seal the carrots in the marinade in a container and let them marinate for at least 12 hours. Only in this way they get their sea flavor and their smoky aroma.
  • The time to steep the carrots in the marinade is not included in the preparation time.
