It’s not without reason that in the summer vareniki with sour cherries can’t be missing on the dining table in Slavic countries. They not only taste delicious, but are very easy to make. Which cherries for vareniki filling?
Classically, vareniki are filled with fresh sour cherries. The tart fruits combine perfectly with the tender dough and create a delicious flavor combination.
Sweet cherries are rather less suitable for filling the dumplings. This could make them taste boring.
In Ukraine or Russia, the sour cherry vareniki are very popular in summer, just like the strawberry vareniki. As soon as the cherry season starts, and you have picked the fruits in your garden, they are made into various delicacies. In addition to the sweet dumplings, there is, among other things, a fresh kompot or the sour cherry jam for the winter with them.

Where can I find fresh sour cherries?
In Germany you can get sour cherries from your local farmer, among others. There are also orchards where you can pick the fruits yourself. They are offered at some fruit markets too.
Maybe you have your own sour cherry tree in your garden. Then you can make the vareniki with it, as soon as your fruits are ripe.
How to serve fruity dumplings?
Serve the cherry vareniki fresh, right after cooking. Then they taste best.
You can serve them with sugar sprinkled, with sour cream or cashew sour cream. They also taste delicious with a cherry or vanilla sauce.

Vegan sour cherry vareniki recipe
For the sweet vareniki recipe, which you can find here at the end of the post in the recipe box, you only need a few ingredients. All of them are also purely plant-based.
The dough for the fruity dumplings, just like the dough for my vegetarian pelmeni, consists of water, flour, vegetable oil and salt. The only ingredients needed for the filling are fresh sour cherries and possibly some sugar.
Moreover, the cherry vareniki recipe is very simple. You knead an elastic dough from the ingredients and let it rest for a short time. Meanwhile, you can pit sour cherries.
Then you form small crescent-shaped dumplings from the dough, filled with sour cherries and – according to taste – a little sugar. Now boil them in plenty of water for about 5 minutes and serve them immediately.
How to make cherry vareniki: tips and tricks
- If your vareniki dough is too dry, add some more water. If it is sticky, add more flour.
- You can adjust the amount of sugar for the filling according to your taste. You can also omit the sugar completely.
- Tape the sides of the dumplings as tightly as possible to prevent them from rising during cooking.
- Cook the cherry vareniki immediately after preparation. If you leave them for a long time, the fruit juice will soak the dough and flow out.
- To shape the dumplings, you can use a dumpling shaper.

Cherry vareniki
Ingredients
for the dough
- 180 ml boiling water
- 300 g flour**
- 20 ml vegetable oil
- 1/2 tsp salt
for the filling
- 300 g pitted sour cherries
- 40 g sugar** or to taste
for cooking
- water
- 1 pinch of salt
Instructions
Preparation of the dough
- Mix flour with salt and vegetable oil in a mixing bowl.
- Pour boiling water and mix the mixture first with a wooden spoon or a fork. Once it is no longer hot, knead it into a firm dough with your hands.
- Knead the dough for about 5 minutes and let it rest covered for 20 minutes.
Preparation of the cherry vareniki
- Roll out the dough to about 1 - 2 mm thick and cut out circles from the dough using a drinking glass or a round cookie cutter.
- Put about 1/4 tsp sugar in the center of each dough circle, place some pitted sour cherries on it, close each dough circle into a semicircle and stick the edges firmly together.
Cooking the cherry vareniki
- In a large saucepan, bring plenty of salted water to a boil.
- Add the cherry vareniki one by one to the boiling water, stir gently with a wooden spoon, bring to a boil and simmer for about 5 minutes.
- Remove the vareniki from the water with a slotted spoon and serve.
Notes
