This chia pudding with coconut milk tastes fruity, light and creamy. I have spiced it up with blackcurrants and a banana. It is quick and easy to prepare with just a few plant-based ingredients. What is chia pudding?

Chia pudding is made by soaking chia seeds in any liquid, such as plant milk, fruit juice or yogurt. After swelling, they take on a pudding-like consistency. For more flavor, the chia base is then refined with various toppings such as fruits, nuts or spices.

Basic chia pudding recipe

You only need two ingredients for the basic chia pudding recipe. These are chia seeds and liquid of your choice.

I have also refined the base with blackcurrants and a banana just before it swells. Alternatively, leave out the fruits in my recipe and top your chia pudding later as you wish.

I made the chia pudding with coconut milk. This gives it a creamy consistency and a delicate flavor.

Any other plant milk is suitable as an alternative. The chia seed pudding is delicious with almond milk, pistachio milk, hazelnut milk and cashew milk, among others.

You can also soak the chia seeds in a fruit juice. A plant-based yogurt is also suitable.

Ideas for different flavors

You can create many different flavors of chia seed pudding, similar to water kefir or a fresh kompot. The basic recipe can be modified as desired.

Fresh berries, any fruits and a fruit puree are ideal as a topping. You can also spice up your chia seed pudding with chopped nuts, shredded coconut, seeds or a nut butter. You can also spice up your chia seed pudding with chopped nuts, grated coconut, seeds or a nut butter.

Add cocoa powder to give it a chocolate flavor. You can also add chopped chocolate or chocolate chips.

The chia pudding is also delicious and particularly aromatic with various spices. Mix in ground vanilla bean, cinnamon or grated tonka bean.

Possible sweeteners

For my chia seed pudding, I used a very ripe banana and no additional sweetener. However, you can sweeten it with maple syrup, agave syrup, honey or pureed dates, similar to homemade fruit salads or vegan gummy bears. Adjust the amount depending on how sweet the toppings for your chia pudding are.

How to serve and store

The chia seed pudding not only tastes heavenly delicious, but is also healthy and filling. You can therefore enjoy it for breakfast alongside the jam oatmeal bars. But it’s also perfect for dessert after a meal or as a snack between meals.

As I stir fresh fruits into my chia pudding before it swells, it should be eaten the next day at the latest. If you want to keep it for longer, first prepare the base from the seeds and a liquid and mix it with fruits just before serving.

Optionally, you can also make the chia seed pudding with a fruit powder. It will then keep longer in the fridge.

You can store the chia base without fresh fruits in a cool place for around 3 – 5 days. The shelf life depends on the plant milk used. A homemade milk alternative has a shorter shelf life than store-bought milk.

Chia pudding

Ingredients

Instructions
 

  • Peel banana and cut it into chunks.
  • Put coconut milk, blackcurrants and the banana pieces in a blender and blend until smooth.
  • Pour the fruit coconut milk and chia seeds into a bowl or larger glass and mix thoroughly with a whisk for about a minute.
  • Divide the chia seed mixture between three dessert glasses, cover and chill for approx. 1 hour or overnight until firm.
  • Top the chia pudding with fresh fruits and serve.
