Cornelian cherry liqueur
Equipment
- preserving jar
- glass bottle
- cheese cloth
Ingredients
- 700 g cornelian cherries very ripe
- 700 ml white rum
- zest of 1 organic orange
- 150 g sugar
- 150 g water
Instructions
- Put cornelian cherries in a large preserving jar and crush them a little with a potato masher.
- Add orange zest and pour white rum over it.
- Seal the jar and leave the fruit in alcohol to infuse in a dark place at room temperature for 2 weeks. You can shake the jar occasionally.
- Put sugar and water in a saucepan, bring to the boil while stirring and boil for 1 - 2 minutes.
- Leave the sugar syrup to cool to room temperature.
- Pour the cornelian cherry rum mixture through a cheese cloth, collecting the liquid in a clean, large preserving jar, and squeeze the fruit in the cheese cloth vigorously.
- Pour the sugar syrup into the jar with the cornelian cherry rum, stir, seal the jar and leave to infuse in a dark place at room temperature for 2 - 3 weeks.
- Pour the finished cornelian cherry liqueur into sealable glass bottles. It tastes best chilled.
