Easter cake with quark, raisins and sugar icing

The batter for this Easter cake is made with quark, just like for the berry quark bundt cake. This makes it taste incredibly moist. At the same time, it has a very fluffy and soft consistency.

Raisins give the cake a sweet and slightly fruity note. They also make for a pretty cut, similar to the Raisin cake “Stolichny”.

The sugar icing gives the quark bundt cake a festive look, just like the poppy seed wreath. Colorful sprinkles on top make it perfect for the Easter table, just like the kulich with quark.

Refine to taste

You can make the Easter cake with quark with more than just raisins. Instead, use other dried fruits such as apricots, prunes or cranberries, just like for the vegan coffee nut bundt cake.

Alternatively, refine the batter with fresh lemon and orange zest. Candied lemon peel and candied orange peel are also suitable.

The Easter bundt cake also tastes delicious simply flavored with vanilla. In this case, you may need a little more sugar for the batter.

Decorate as you like

I decorated my quark bundt cake with sugar icing made from milk and powdered sugar. It was also sprinkled with homemade colorful sprinkles, which are perfect for Easter.

Alternatively, you can simply dust the quark cake with powdered sugar, just like the apple bundt cake with cinnamon. Fresh fruits are just as perfect for decorating.
