First, you boil a simple syrup of water and sugar. Then you dip elderflowers into the hot sugar syrup, add lemon juice and let it steep closed for at least two hours.

Then pour the elderflower syrup through a sieve** or a straining cloth and dilute it with water.

Elderflower lemonade

Ingredients
  

  • 5 elderflower umbels large
  • 100 g sugar** or to taste
  • juice of 1 lemon freshly squeezed
  • 500 ml tap water
  • 700 ml sparkling water

to serve

  • fresh elderflowers
  • ice cubes or crushed ice

Instructions
 

  • Thoroughly shake out freshly collected elderflower umbels to rid them of insects. If necessary, leave the blossoms on a tea towel for a short time to get out any remaining insects.
  • Remove any large stems from the blossoms.
  • Put sugar and 500 ml of water in a saucepan and bring to a boil, stirring so that the sugar dissolves before the syrup boils.
  • Take the sugar syrup off the heat, add the elderflower umbels with the blossoms facing down to the hot syrup so that the blossoms are completely covered with it.
  • Also add freshly squeezed lemon juice to the sugar syrup with the elderflowers.
  • Place the lid tightly on the saucepan and let the syrup steep until it cools to room temperature (but at least 2 hours).
  • Pour the elderflower syrup through a fine sieve or straining cloth into a water carafe, squeezing the blossoms a little as you go.
  • Pour sparkling water over the syrup and stir.
  • Serve the elderflower lemonade with fresh elderflowers and ice cubes or crushed ice.
