Fruit roll ups taste fruity, are healthy and ideal for snacking or giving as a gift. In Russia, by the way, they are known as pastila. You can make your own fruit leather from any seasonal fruits. Which fruit for fruit leather recipe?

Any fruit is suitable for making healthy fruit roll ups, just like for a fruit salad. They should be ripe or overripe.

You can use fresh berries or fresh fruits, similar to the fresh kompot or the berry iced tea. Frozen fruit is also suitable. Defrost them in a sieve beforehand so that the excess liquid drips off.

Fruit leather can also be made from a ready-made fruit puree, preferably sugar-free. For example, you can use apple puree for this.

Sweeten to taste

If you use ripe and sweet fruits, your fruit leather does not need any additional sweetener, just like the watermelon sorbet or the mango sorbet. Optionally, you can stir sugar into the fruit puree to taste. Agave syrup, honey or pureed dates are also suitable for sweetening.

Russian pastila

Fruit leather is called pastila in Russia. In the past, it was mainly made from fallen fruits. It was dried in a Russian oven.

Pastila made from apple puree is very popular. But raw fruits can also be used for it.

How to dry healthy fruit roll ups

You can dry healthy fruit roll ups in various ways. The drying time is around 6 – 8 hours. It depends on how juicy the fruit is and how thickly you spread the fruit puree on the baking tray.

Fruit leather is ready when its surface is no longer sticky. Then remove it from the baking paper and check that it is dry on the other side too. You may need to turn it over and let it dry again.

Fruit leather should have a rubbery consistency and be easy to roll up. If you dry it longer than necessary, it will become brittle.

In the sun

On warm summer days, you can leave your healthy fruit roll ups to dry in the fresh air in the sun. Cover the baking tray beforehand with a fly net, without letting it touch the fruit puree, or a fly hood. If the outside temperature is very high, it is best to place the fruit leather in the shade during the midday sun.

In the oven

Dry fruit leather in the ovenat 176 °F – 212 °F (80 °C – 100 °C), similar to the apple chips. Open the oven door from time to time to allow the steam to escape.

In a dehydrator

Fruit leather can also be dried in a dehydrator. Follow the operating instructions for your appliance.

How to store fruit leather

Store the homemade healthy fruit roll ups in an airtight container, for example in a glass jar, in a cool, dry and dark place, but not in the fridge. The cellar is perfect for this. The fruit leather will keep for several months, just like the homemade fruit powders or the homemade sprinkles.

Snacking or giving as a gift

Homemade fruit leather, alongside the homemade vegetable chips, makes a healthy snack that you can nibble on between meals. It is best not to use any additional sweetener when making it. Nicely packaged, it also makes a delicious gift from the kitchen.

Ingredients

Instructions

  • Dry the fruit puree in the oven at 176 °F - 212 °F (80 °C - 100 °C) for approx. 5 - 9 hours. Open the oven door briefly several times to allow the steam to escape.
  • As soon as the consistency of the fruit leather is rubbery and the surface is firm and no longer sticky, take it out of the oven and leave it to cool.
  • Remove the fruit leather from the baking paper, cut it into wide strips and roll them up if necessary.
