These green lentil patties taste spicy, nutty and juicy. They contain only plant-based ingredients and are easy to prepare. You can serve the green lentil fritters as a main meal with a side dish or vegetable salad, as a snack between meals or as burger patties. You can find a detailed recipe with the exact quantities and step-by-step instructions below.

Cook and drain the green lentils
You will need cooked green lentils for this recipe. I cooked them for 20 minutes in three times the amount of water. Follow the pack instructions for your lentils.
Allow the cooked lentils to cool and drain thoroughly before using them to make the fritters. It is best to cook them the day before and leave them to rest overnight in a sieve in the fridge.
The better the lentils are drained, the less oats you will need. You can then adjust the quantity yourself so that you have a malleable mixture.

Alternatives to oats
Oats give the lentil mixture a firm consistency so that the patties keep their shape and don’t fall apart, just like in the lupin fritters recipe, beet patties recipe or kidney bean fritters recipe. Alternatively, you can use breadcrumbs. You can also use flour or wheat semolina.
Seasoning to taste
To ensure that the green lentil patties turn out tasty, you should season them well, just like the chickpea patties, the white cabbage patties or the buckwheat patties. Use herbs and spices to suit your taste. I seasoned the lentil mixture with marjoram, cumin, salt and black pepper.
