  • Pour cold cream into a large, tall container and beat with a hand mixer for approx. 10 - 15 minutes until the cream first stiffens and then separates into yellowish solid lumps of fat and buttermilk.
  • Pour the mixture through a fine sieve, collect the buttermilk in a clean container and press the lumps of butter together with your hands to form a whole lump of butter.
  • Pour plenty of clean, very cold water into a mixing bowl and wash the butter in it, kneading and folding it lightly with your hands. Pour off the water, add more clean water and wash the butter again. Repeat the process a third time if necessary so that the water remains clear after washing.
  • Squeeze the excess liquid out of the butter with your hands, shape it as desired and store it well wrapped in the fridge.
