In the oven or dehydrator

I have dried fruits and vegetables in the oven and then ground them into a powder in a blender. If you have a dehydrator, you can use it for drying. Follow the instructions for your appliance.

What does the drying time depend on?

Drying time of fruits and vegetables in the oven or a dehydrator depends on several factors.

The more moisture the fruits or vegetables contain, i.e. the juicier they are, the longer they will take to dry.

Drying time also depends on the size of the pieces into which they have been chopped. Therefore, cut the fruits or vegetables you are using into the thinnest possible slices, chop them very finely or grate them using a coarse grater.

You should also spread the pieces of the fruits and vegetables on the baking tray in a layer that is not too thick, similar to when making apple chips or vegetable chips. They will then dry more quickly.

Storing fruit and vegetable powders

Store the homemade vegetable and fruit powders in an airtight container in a cool, dry and dark place. For example, you can transfer each variety individually into a mini glass jar and seal it tightly.

The powders will keep for around 6 – 12 months. As soon as they change color too much, for example, turn gray, you should no longer use them.
