  • You can use buttermilk instead of kefir.
  • Add the hot milk to the egg kefir mixture in a thin stream while stirring continuously to prevent the eggs from setting.
  • Pour enough batter into the pan for each pancake so that it is not spread too thinly, but about 2 mm thick. This allows a distinct pattern to form.

Lace pancakes

Ingredients
  

  • 260 ml milk
  • 250 g milk kefir room warm
  • 2 eggs room warm
  • 200 g flour
  • 1 tsp baking soda
  • 3 tbsp vegetable oil
  • 2 tbsp sugar
  • 1/3 tsp salt
  • butter to spread on the pancakes
  • vegetable oil to grease the pan

Instructions
 

  • Beat eggs with salt in a mixing bowl.
  • Add kefir and sugar and mix.
  • Add flour and mix to form a thick batter.
  • Cover the batter and leave to rest at room temperature for 1 hour.
  • Bring milk to the boil, remove from the heat, immediately add baking soda and mix thoroughly, creating a strong foam.
  • Pour the hot milk with soda into the batter in a thin stream, stirring constantly to create a slightly thick batter.
  • Add vegetable oil to the batter and stir.
  • Grease the pan with vegetable oil and heat it up.
  • Pour enough pancake batter into the pan with a ladle so that it is about 2 mm thick and bake the pancake over just under medium heat, first from one side until the surface of the pancake is completely covered with holes and then from the other side until golden brown.
  • Brush the lace pattern side of the pancake lightly with a knob of butter while it is still hot.
  • Bake more pancakes in the same way until the batter is used up, stirring it repeatedly. The pan no longer needs to be greased. Brush the pancakes with butter in the same way.
