“Lenivye pelmeni” translated from Russian means something like “lazy pelmeni” or “pelmeni for lazy people”. They are a quick alternative to the classic pelmeni.
Although the preparation of lenivye pelmeni requires a certain amount of time, the shaping of each individual small dumpling by hand is saved with this recipe. Because of this, the pelmeni were called “for lazy people”. Because you don’t always have the time or the inclination to form the Russian dumplings with your hands.
Pelmeni for lazy people vegan
Just like my classic pelmeni, I have also made the dumplings for lazy people in a vegan version.
You can make the pelmeni dough very easily without animal ingredients. You only need water, flour, vegetable oil and salt.
The filling for my vegan pelmeni for lazy people consists of mashed potatoes and fried mushrooms. This combination tastes very delicious – also together with the dough.
Seasoning mushroom-potato filling
To make sure your lenivye pelmeni don’t taste bland, you should season the mushroom and mashed potato filling really well for it. It’s just like with vegan oatmeal patties or lentil patties. Taste the filling in between and season it if necessary.
I seasoned the mushroom-potato filling only with salt and black pepper. But you can still use different spices and herbs for it. For example, season the mixture with paprika powder**, chili powder**, nutmeg**.
How to serve Russian dumplings for lazy people?
Serve the pelmeni for lazy people warm as a main course for lunch or dinner.
They taste delicious with a vegetable salad. You can also add (vegan) sour cream, a sauce, for example a tomato sauce, or mustard. Fresh herbs, such as parsley or dill, go well with lenivye pelmeni.

Quick recipe without dumpling molds
The recipe for lenivye pelmeni, which you’ll find at the end of the post in the recipe box, is pretty simple. Unlike the classic pelmeni, here you don’t have to form small dumplings with your hands. So the preparation is much faster.
First, you prepare the filling for the lenivye pelmeni. Boil potatoes and mash them. Then fry mushrooms cut into small cubes. Now mix the mashed potatoes with the mushrooms and season the filling to taste.
Knead the pelmeni dough and let it rest for about 20 minutes.
Then roll out the dough, spread the filling on it and roll it up. Cut the dough roll into pieces, place the dough snails in a pan and simmer them in vegetable broth. Your pelmeni for lazy people are ready!
