Ingredients
  

  • juice of 2 organic limes
  • zest of 2 organic limes
  • 350 g cream cold
  • 3 egg yolks
  • 90 g sugar

Instructions
 

  • Place lime juice, lime zest, egg yolks and sugar in a saucepan and mix thoroughly to form a homogeneous mixture.
  • Heat (do not boil!) the mixture over a low heat for approx. 10 - 15 minutes, stirring constantly, until it becomes creamy and thickens slightly.
  • Transfer the lime mixture to a clean bowl and leave to cool, stirring occasionally. You can also cool it quickly on ice water.
  • Whip cream until creamy, but not too stiff.
  • Fold the cream into the lime mixture.
  • Transfer the lime ice cream mixture to a freezer-safe container and place in the freezer for approx. 6 hours until firm, stirring vigorously every hour for the first 3 hours.
