Which lupins for the recipe?
You can use either dried or canned lupins for the lupin fritters recipe.
Dried lupins
You should only buy sweet lupin beans in their raw state. This variety is specially bred for consumption.
Wild lupins, on the other hand, contain poisonous bitter substances. They must first be de-bittered in a complex process.
Sweet lupin beans are mainly available to order online. They are difficult to find in local supermarkets.

Lupin fritters
Ingredients
- 60 g linseed
- 100 ml hot water
- 380 g cooked sweet lupins or canned lupins (200 g dried sweet lupins for cooking)
- 1 carrot medium
- 1 onion medium
- 2 cloves of garlic
- 50 g quick oats
- 1 tsp dried oregano
- 1 tsp dried marjoram
- 1 tsp cumin
- 1 tsp turmeric powder
- 1/2 tsp black pepper
- 1 tsp salt or to taste
- vegetable oil for frying
Instructions
- Finely grind linseed in a blender.
- Put them in a bowl, pour hot water over them, stir and leave to soak for 15 minutes.
- Finely chop drained cooked or canned lupins in a blender.
- Cut carrot into coarse pieces. Peel onion and garlic and cut them into coarse pieces too.
- Put the carrot, onion and garlic in a blender, puree them finely and add them to the lupins.
- Add quick oats and the linseed mixture to the lupins and mix.
- Season the lupin mixture with oregano, marjoram, cumin, turmeric powder, black pepper and salt and leave to rest for 15 minutes.
- Now knead the lupin mixture again and shape it into small patties with wet hands. If the lupin mixture is too dry, add a little warm water in small portions.
- Pour plenty of vegetable oil into a frying pan and heat over a medium heat.
- Fry the lupin fritters over a low to medium heat until golden brown on one side, then carefully turn them over and fry them until golden brown on the other side too.
