Mini pizza toppings
Let your imagination run wild when topping the mini pizza. A delicious tomato sauce may not be missing, of course. In addition, you can top it with various vegetables, for example zucchini, peppers, tomatoes, broccoli or eggplant. Also with mushrooms, peas, corn, olives, capers it tastes very delicious. Pizza bites vegan or vegetarian
The dough for this mini pizza contains no animal products just like the tomato sauce. Top the pizzetta with any vegetables and you have it vegan. Can’t do without cheese on your pizza? Then sprinkle it before baking with vegetable pizza cheese, which is also called pizza melt. Or make the vegan cheese sauce with yeast flakes for the pizza bites. With its size, the mini pizza can be easily eaten out of hand. Thus, it is convenient to serve and fits perfectly as finger food for a celebration. You can make it for a barbecue party, for example. It is also perfect for a children’s birthday party.

Served with a vegetable salad, it passes for lunch or dinner as a main meal that fills you up and tastes delicious. In addition, the mini pizza is ideal for on the go. Quick vegan mini pizza recipe
The mini pizza recipe is very simple. The yeast dough only needs about 1 hour to rise. In that time, you’ll prepare the tomato sauce and toppings. Here you can get a rough idea of how the preparation goes, and what you need for it. The exact quantities and step-by-step instructions for making the pizza bites yourself can be found below in the box recipe.
For the yeast dough you need
- flour,
- lukewarm water,
- yeast – I used fresh yeast,
- some olive oil,
- some salt and sugar.
For the tomato sauce you need
- strained tomatoes,
- garlic
- and spices – oregano, basil, salt, pepper.
For the topping, add a variety of vegetables. I had broccoli, tomatoes and onions.
How to make pizza bites: here’s how (Check out the detailed recipe at the bottom.)
- First, knead the yeast dough with the ingredients and let it rise in a warm place for 1 hour.
- For the tomato sauce, simply mix all the ingredients together.
- Now form small pizza crusts from the dough, spread them with the tomato sauce and top them with the vegetables. Then bake the mini pizza at 250 °C for about 10 minutes. Done!
How to make pizza bites: tips and tricks
- Instead of fresh yeast you can use dry yeast for the dough. For the recipe below you will need 7 g of it.
- Make sure that the water for the dough is lukewarm. It must not be hot, otherwise the yeast will lose its effect, and it must not be cold, otherwise the dough will take too long to rise.
- The amount of flour given in the recipe may vary. Therefore, add the flour in portions until the dough has the right consistency. It should be firm and somewhat sticky, not mushy and not dry.
- Be sure to knead the yeast dough for about 7 – 8 minutes so that it becomes smooth, elastic and no longer sticky.
- For the tomato sauce you can use any spices. You can also adjust the amount of garlic to taste.
- Instead of broccoli, tomatoes and onions, you can add any toppings to your pizza bites. Here you can find some ideas.
- Because of the high baking temperature, you should not leave the mini pizza unattended for too long while baking, so that it does not burn.

Ingredients
for the dough
- 300 ml water (lukewarm)
- approx. 500 g flour type 550
- 21 g fresh yeast
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp sugar
- flour for the work surface
for the topping
- approx. 150 g broccoli (separated into small florets)
- approx. 200 g tomatoes (cut into slices)
- 1 red onion (cut into rings)
- 50 g pizza cheese vegan (alternative)
- some olive oil
for the tomato sauce
- 200 g strained tomatoes
- 1 clove of garlic
- 1 tsp oregano
- 1 tsp dried basil
- salt
- pepper
Instructions
Preparation of the dough
- Dissolve fresh yeast and sugar in lukewarm water.
- Add olive oil, salt and flour in batches and knead into a firm, somewhat sticky dough. Then knead the dough for about 7 minutes and let it rise covered in a warm place for 1 hour.
Preparation of the tomato sauce
- Put strained tomatoes, garlic, basil, oregano in a blender and blend it to a homogeneous sauce.
- Season the tomato sauce with salt and pepper.
Preparation of the mini pizzas
- Dust the work surface with flour. Divide the dough into 12 pieces and shape each piece into a small pizza crust with an edge about 1 cm wide.
- Spread half of the pizza crusts on a baking sheet lined with parchment paper and the second half on a second baking sheet.
- Spread each pizza crust with the tomato sauce and spread broccoli, tomatoes and onions on top. Alternatively, sprinkle them with vegan pizza cheese.
- Drizzle the mini pizzas with a little olive oil and bake the pizzas on the first baking sheet first, then on the second in a preheated oven at 250 °C top and bottom heat for about 10 minutes each.
