What is mole cake?

A mole cake is a very popular cake in Germany, that visually resembles a molehill. That’s where the name comes from. The classic mole cake consists of a chocolate sponge cake, the cream with chocolate shavings and fresh bananas.

To cut bananas in half or not?

According to the classic mole cake recipe, bananas are first cut in half lengthwise and then spread flat side down on the sponge cake base. I, on the other hand, had made my mole cake with whole bananas. This makes it look prettier when cut, I think. It also gives the cake more banana flavor. But you can do it the way you like it. If you would rather not have so much banana flavor in the cake, then cut the bananas beforehand. In this case, you’ll get by with fewer bananas than the recipe says below. While I used five bananas, you’ll probably only need about half that.

Don’t like bananas or want to try something different instead of the classic version? No problem! You can also make the mole cake with other fruits. In summer, for example, fresh strawberries fit perfectly for it. With them, the mole cake tastes fruity, refreshing and summery. But you can also make it with other fruits or berries. Among other things, the cake tastes delicious with fresh raspberries or cherries. By the way, a combination of bananas and other fruit is just as delicious. Alternative to cream

If you are not a big fan of pure cream or would like to have a slightly sour note in the cake, you can also make the cream for the mole cake with curd and cream. To do this, replace some of the cream in the recipe with curd and add some powdered sugar to it, otherwise the cream might taste too sour. Simply whip the curd with the powdered sugar. You can also add a banana mashed with a fork to the curd mixture to give the mole cake even more banana flavor. Then whip the cream with cream stabilizer and vanilla until stiff. At the end, carefully fold the curd mixture into the cream mixture. Your curd cream for the hill cake with bananas is ready.

How to serve and store the mole cake?

Immediately after making, you should refrigerate your mole cake for at least two hours before eating it. In that time, the cream can firm up so that the cake is easy to slice afterwards, and the cream won’t be mushy in the process. The mole cake tastes best the day it is made or the next day, after it has been in the refrigerator for a few hours or overnight. However, it is still very tasty for a few days after that. Keep it in the refrigerator for up to about 3 days.

Since the mole cake is very quick to make yourself, you can conjure it up spontaneously in a short time, among other things, for dessert during the week or on the weekend on the dining table. The mole cake recipe is very easy, so you can make the cake in a flash. All you have to do is bake the sponge, whip the cream and peel the bananas. Then you put all this together to make a cake, and it’s ready.

For the sponge cake base you need milk, soft butter, sugar, eggs, flour, cocoa powder, baking powder and vanilla. For the cream, all you need is cream, chocolate shavings, cream stabilizer and vanilla. And to fill the cake do not forget fresh bananas, of course.

How to make the hill cake with bananas: this is how it works

  1. For the sponge cake batter, beat soft butter, sugar and vanilla until fluffy and creamy. Stir in eggs one at a time. Mix flour with cocoa powder and baking powder and stir into the liquid mixture in batches, alternating with milk, to form a viscous dough. Pour the batter into the springform pan, bake at 180 °C for approx. 20 minutes and allow to cool.
  2. For the cream, whip cream with cream stabilizer and vanilla until stiff. Fold in the chocolate shavings.
  3. Hollow out the sponge cake base, cover with bananas and spread the cream on top. Crumble the spooned out sponge cake, sprinkle the cake with the crumbs and chill for at least 2 hours. Ready!

How to make mole cake: with these tips and tricks you will succeed

  • To bake the sponge cake, you need a Ø 24 cm baking springform pan.
  • Use a wooden skewer to test whether the sponge cake is baked. Insert a wooden skewer briefly into the center of the sponge cake and see if it stays almost clean after being pulled out.
  • Do not fill the sponge cake with the cream while it is still warm, but let it cool to room temperature first.
  • When scooping out the sponge cake, be careful not to pierce the bottom, and be sure to leave a rim, so bananas can’t slide out of the cake later.
  • Cream for the cake cream must be cold before whipping.
  • Be sure to chill the mole cake for at least 2 hours after making so that the cream can set.
  • Store the mole cake in the refrigerator. You can store it for up to about 3 days.

  • 2 eggs

Instructions
 

Preparation of the dough

  • Line the bottom of the springform pan with baking paper and grease the sides with butter or margarine.
  • Beat softened butter, sugar, vanilla and salt for about 3 - 4 minutes until fluffy and creamy.
  • Add eggs one at a time, beating each time until homogeneous.
  • Mix flour with cocoa powder and baking powder.
  • Add the flour mixture alternately with milk in batches to the butter mixture and mix it each time to a homogeneous mass, so that you have a viscous dough at the end.
  • Pour the batter into the springform pan, bake the chocolate sponge cake in a preheated oven at 180 °C top and bottom heat for about 20 minutes and let it cool.

  • Whip the cream with cream stabilizer and vanilla sugar until stiff.
  • Fold in the chocolate shavings.

  • Hollow out the sponge cake base with a tablespoon to a depth of about 1 cm, leaving an edge of about 1 cm, and crumble the spooned out sponge cake.
  • Peel bananas and line the bottom of the scooped out sponge cake base with them so that it is completely filled with bananas.
  • Spread the cream in a dome shape over the bananas and the sponge cake edge.
  • Sprinkle the cream completely with the sponge crumbs and press down lightly. Refrigerate the mole cake for at least 2 hours.
