Palmiers, also called pig ear cookies in Germany, is a French pastry made from puff pastry. To make it, the rolled out puff pastry is sprinkled with sugar and possibly some more cinnamon or other spices, rolled up and cut into slices, which then become cookies in the shape of hearts. During baking, the sugar caramelizes a little, so that the cookies end up tasting crispy and fluffy.
Why make palmier cookies yourself?
Of course, you can just buy palmier cookies. They are offered in many supermarkets and bakeries.
But homemade palmiers have many advantages over store-bought ones. You can refine them according to your taste, using different spices or chocolate. You can also adjust the amount of sugar, depending on how sweet you like the puff pastry cookies.
You can also make the pig ear cookies in any size you like. And last but not least, homemade palmiers taste much better than ones from the supermarket.
Buy puff pastry for pig ear cookies or make it yourself?
With homemade puff pastry, the palmier cookies taste best, of course.
You can make the dough in advance and then freeze it. That way, you can quickly make the French palmiers anytime you get a craving for the cookies. Don’t roll out the homemade dough too thin, so that it tastes flaky after baking.
If you don’t have time to make your own puff pastry, you can of course use some from the supermarket for the palmier cookie recipe. Then you just let it thaw according to package instructions, because it is already rolled out.
Refine palmier cookies
You can make your palmier cookies with just puff pastry and sugar. You can use either white or brown sugar. With these two ingredients, the cookies already taste incredibly delicious.
But you can spice them up with different spices and make them even more aromatic. To do this, sprinkle the puff pastry with the spice of your choice in addition to the sugar. To refine are among other things:
- vanilla sugar,
- cinnamon,
- coconut flakes,
- lemon zest,
- orange zest,
- cocoa powder

All you have to do is roll out the puff pastry or let it defrost briefly if you use some from the freezer, sprinkle it with sugar, roll it up and cut it into slices. After that, the puff pastry cookies need about 15 minutes in the oven and can already be snacked.
How to make vegan palmier cookies?
If you want to make vegan pig ear cookies, use vegan puff pastry for the recipe. You can make it yourself with vegan margarine instead of butter.
Alternatively, you can buy vegan puff pastry. Many supermarkets offer the dough in a vegan version. You can find it either in the refrigerated section or in the freezer. Look for the dough to be labeled vegan.

Palmier cookies / palmiers recipe (sweet pig ear cookies)
Ingredients
- 450 g puff pastry (bought or homemade)
- 80 g sugar
- cinnamon or other spices (alternative)
Instructions
- Roll out the homemade puff pastry to a square about 0.3 cm thick or let the purchased puff pastry from the freezer thaw according to package directions.
- Sprinkle the dough liberally and evenly with sugar and cinnamon, if desired, and roll it up tightly from the two long sides toward the center. Place one of the rolls on top of the other, without separating the rolls, and press them together to flatten slightly. Cut the roll into slices about 1 cm thick, flatten each slice into the sugar to form heart shapes, and spread the cookies on a baking sheet lined with parchment paper, leaving a little space between them.
- Bake the palmier cookies in a preheated oven at 220 °C top and bottom heat for about 10 minutes until they get a light brown color, then turn them and bake them for another 5 minutes or so.
