Rice patties vegan
Ingredients
- 150 g round grain rice
- 300 ml water for cooking rice
- 300 g zucchini
- 2 onions medium
- 50 g flour
- 1 tsp paprika powder
- 1/4 tsp ground cumin
- 1/2 tsp black pepper
- salt to taste
- vegetable oil for frying
Instructions
- Cook round grain rice in salted water and leave to cool thoroughly so that it becomes firm and sticky.
- Peel and chop onions, fry in 2 tbsp vegetable oil until golden brown and leave to cool.
- Grate zucchinis with a coarse grater, add 1/2 tsp salt, stir and leave the vegetables to infuse for 10 minutes.
- Squeeze the excess liquid out of the zucchini mixture thoroughly using a cheese cloth and add the zucchini to the rice.
- Add the fried onions, paprika powder, cumin, black pepper and possibly salt to the rice zucchini mixture and stir to combine.
- Add flour and stir to form a firm, sticky mixture.
- Pour some vegetable oil into a frying pan and heat over a medium heat.
- Add a heaped tablespoon of rice zucchini mixture per patty to the pan, flatten slightly and fry the rice patties over a medium heat until golden brown on both sides.
- Drain them briefly on kitchen paper immediately after frying and serve.
