Which rice?

For the recipe you should use a sticky and not a fluffy type of rice, just like for the vegan lentil patties or vegetarian pelmeni. Such a rice binds the sweet casserole and ensures a good consistency. Short grain rice is perfect for this. After all, the rice and quark casserole comes without flour and without semolina.

You can cook the rice the day before and keep it in the fridge overnight. This allows it to drain thoroughly and will not contain any excess liquid the next day.

Which apples?

The rice quark casserole tastes best with juicy apples. They should also be ripe and taste a bit sour. Such apples bring a sour note and a taste change to the sweet casserole.

Refine with lemon, raisins, cinnamon

By the way, you can refine this rice quark casserole with apples with spices in addition to vanilla.

For example, add lemon zest. This makes the sweet casserole refreshing and especially aromatic.

Refined with raisins, the rice and quark casserole with apples also tastes delicious. Then it is also a little sweeter, so you may want to reduce the amount of sugar.

Or mix some cinnamon into the rice-quark mixture. This will give the casserole a special flavor and a unique aroma.

Do not bake too long

To make sure your sweet casserole tastes moist and not dry, don’t bake it longer than necessary. When you take it out of the oven, it will still be wobbly in the middle. However, it will become firmer after it cools.

You can use a wooden skewer to check if the sweet casserole is baked. Insert the skewer in the middle of the casserole. The wooden skewer should not come out clean, but smeared in moist quark crumbs.
