Bread rolls with sesame yeast dough

According to this recipe, sesame seeds are kneaded directly into the yeast dough. This means you can taste them in the whole buns, including the crumb.

You can also sprinkle the dough pieces with sesame seeds before baking, immediately after sprinkling them with water. You may need to cover the bread rolls with baking paper at the end of the baking time to prevent the surface from burning.

Which flour for sesame seed buns

White flour is best for this recipe, similar to the baguette or the pizza dough. This gives the sesame seed buns a really fluffy and light consistency.

I used white wheat flour, just like for the fluffy rolls. Alternatively, you can use white spelt flour or a mixture of wheat and spelt flour.

Of course, you are welcome to try the recipe with wholemeal flour. However, the sesame seed buns will then have a slightly different consistency. Alternatively, you can simply use my wholemeal bread rolls or whole wheat bread recipe.

Experiment with grains

You can make these bread rolls with more than just sesame seeds. You can also experiment with other grains of your choice. For example, you can use poppy seeds or caraway seeds instead of sesame seeds. You can also try the bread rolls with sunflower seeds or pumpkin seeds.
