  • 100 g farmers cheese (tvorog)
  • 50 g mayonnaise
  • zest of 1 organic lemon
  • 100 g butter cold
  • 200 g flour
  • 100 g sugar
  • 2 g baking soda

Instructions
 

  • Mash farmers cheese finely with a fork.
  • Add mayonnaise and lemon zest and stir it in.
  • Chop butter into flour.
  • Add sugar and baking soda and mix it together.
  • Add the farmers cheese mixture and mix it into a very soft dough that can be piped with a little force and retains its shape after piping.
  • If your dough is too firm, add a little more mayonnaise. If it is too runny, add a small amount of flour.
  • Transfer the dough to a piping bag with a large open star nozzle and pipe strips approx. 5 cm long, leaving plenty of space between them, onto two baking sheets lined with parchment paper.
  • Bake the tvorog spritz cookies first on the first baking sheet, then on the second baking sheet in a preheated oven at 356 °F (180 °C) for approx. 10 minutes each and let them cool completely.

Decorating the cookies

  • Melt chocolate slowly in a hot water bath.
  • Using a spoon or piping bag, pipe stripes of the chocolate onto the ends of the cookies and leave them to dry briefly.
