A popular delicious combination is united in these muffins. It consists of aromatic strawberries and sweet chocolate.

Thanks to strawberries muffins taste heavenly fruity. They are very moist, fluffy and chocolatey.

Even more chocolate flavor gives the pastry the chocolate glaze. The fresh fruits placed on the muffins make them taste even more like strawberries.

Because the chocolate batter for these muffins contains a generous portion of vegetable oil, they taste especially moist after baking. They owe their soft consistency to the kefir.

Because kefir adds a lot of acid to the batter, don’t substitute baking soda for baking powder in the recipe. Baking soda ensures that the dough rises during baking and that the muffins have a really fluffy consistency.

The strawberry chocolate muffins recipe you’ll find here at the end of the post in the recipe box is very simple and lightning fast. So you don’t have to spend a lot of time in the kitchen on a warm summer day.

You first mix all the liquid ingredients together. Then you mix the dry ingredients. Now you mix the two masses to a batter. Pour the batter into the muffin tin and put strawberry pieces into the batter. Then bake the strawberry and chocolate muffins for about 20 minutes.

When they are cool, you can decorate them with the chocolate glaze and strawberry halves, like I did.

Strawberry chocolate muffins

Ingredients
  

  • 300 g strawberries prepared
  • 200 g kefir
  • 200 g sugar**
  • 2 eggs
  • 40 g cocoa powder**
  • 120 ml vegetable oil
  • 1 pinch of vanilla bean**
  • 1 pinch of salt
  • 7 g baking soda** (sodium bicarbonate)
  • 220 g flour**
  • butter to grease the baking tin
  • flour for dusting the baking tin

for decorating

  • 100 g dark chocolate
  • 50 g butter
  • strawberries

Instructions
 

  • Grease the muffin tin with butter and dust with flour, tapping off the excess flour. Alternatively, you can line them with muffin paper baking cups.
  • Cut strawberries into large pieces.
  • Whisk eggs with salt in a mixing bowl.
  • Add kefir, sugar, vegetable oil and vanilla and mix.
  • Mix flour with cocoa powder and baking soda.
  • Add the flour mixture to the kefir mass and mix briefly to form a thick chocolate batter.
  • Fill each muffin tin about 1/3 full with the chocolate batter.
  • Press some strawberry pieces into the batter in each muffin tin.
  • Bake the strawberry chocolate muffins in a preheated oven at 320 °F (160 °C) for about 20 minutes, let them cool down and take them out of the baking tin only afterwards.

Decorating the strawberry chocolate muffins

  • Cut some strawberries (8 for me) into two halves each.
  • Melt dark chocolate together with butter, stirring to make a smooth chocolate glaze.
  • Put about a tablespoon of chocolate glaze on each muffin and place a strawberry half on top, cut side down.

Notes

  • The amount of sugar can be adjusted to taste.
  • In no case stir the batter too long, but only until just homogeneous consistency.
  • Do not bake the muffins longer than necessary so they taste moist and not dry. Use a wooden skewer to check if they are done baking.
