It is easier to make with an ice cream maker. In this case, there is no need to stir by hand. This is done by the ice cream maker. Follow the manufacturer’s instructions for your appliance.

Refine the taste

If you want to add a variety of flavors to your homemade strawberry ice cream, you can spice it up with different ingredients, such as the mango sorbet with basil or the raspberry sorbet with rose water. These can include spices, herbs or chocolate.

Strawberry ice cream

Ingredients
  

  • 400 g strawberries
  • 350 g cream
  • 150 ml milk
  • 4 egg yolks
  • 100 g sugar

Instructions
 

  • Beat egg yolks and 50 g sugar to a creamy, light mixture.
  • Pour milk, cream and the remaining 50 g sugar into a saucepan with a thick base and heat while stirring so that the sugar dissolves and the mixture is just about to boil.
  • Pour the hot milk mixture into the egg yolk mixture in a thin stream, stirring constantly.
  • Pour the egg yolk milk mixture back into the saucepan and heat (do not boil!) over a low heat, stirring constantly, until it thickens slightly (approx. 10 - 15 minutes).
  • Then pour the mixture through a fine sieve and leave to cool, stirring occasionally.
  • Cut strawberries into pieces and puree them finely.
  • Stir the strawberry puree into the egg yolk milk mixture.
  • Pour the strawberry ice cream mixture into a freezer-safe container and place in the freezer for about 8 hours until firm. Stir the mixture vigorously with a whisk or hand mixer every 30 - 40 minutes for the first 2 - 3 hours.
  • Leave the strawberry ice cream to stand at room temperature for approx. 10 minutes before serving.
