The batter for these strawberry muffins is made with natural yogurt. This gives them a heavenly fluffy and soft consistency. They also taste very moist. Strawberries add a fruity note.

Alternatively, you can replace yogurt with kefir. In this case, you may need to adjust the amount of flour in the recipe. The batter for the muffins with strawberries must have a thick, chewy consistency.

Choose the fruit

First mix the liquid ingredients together, then the dry ingredients. Then mix everything together to form a batter. Spread it into the muffin tin and add pieces of fruit. Now just put the muffins in the oven for around 20 minutes.

Refine with chocolate

You can also refine the strawberry muffins with chocolate. Simply stir chopped chocolate into the batter. White chocolate works very well for this. But you can also use dark chocolate. Don’t forget to reduce the amount of sugar if necessary.

  • You can replace natural yogurt with kefir. You may then need more flour for the batter. It should have a thick, chewy consistency.
  • Instead of ground vanilla bean, you can use vanilla sugar or vanilla extract.
  • Only stir the batter briefly until it reaches a homogeneous consistency and never for too long. Otherwise the muffins with strawberries could taste rubbery and not fluffy.

  • 250 g strawberries
  • 200 g natural yogurt
  • 2 eggs
  • 100 g butter
  • 150 g sugar
  • 230 g flour
  • 6 g baking soda
  • 1 pinch of ground vanilla bean
  • 1 pinch of salt
  • butter for greasing the baking tin
  • flour for dusting the baking tin

Instructions
 

  • Grease the muffin baking tin with butter and dust with flour, tapping off the excess flour. Alternatively, you can line it with paper baking cups.
  • Cut strawberries into chunks.
  • Melt butter and leave to cool slightly.
  • Mix eggs with salt.
  • Add natural yogurt, sugar, vanilla and the melted butter and mix.
  • Mix flour with baking soda.
  • Add the flour mixture to the yogurt mixture and mix briefly to form a thick batter.
  • Fill each muffin tin about 1/2 full with the batter.
  • Press several pieces of strawberry into the batter in each muffin tin.
  • Bake the strawberry muffins in a preheated oven at 338 °F (170 °C) for approx. 20 minutes, then leave them to cool for 10 minutes in the oven open a crack and take them out.
  • Leave the muffins with strawberries to cool briefly in the baking tin and then remove them.
