Fruit juice and alternatives
The gummy bears recipe works with any fruit juice. But you can also use smoothies and fruit teas.
Homemade gummy candies taste best when they have a sour note. So add some freshly squeezed lemon or lime juice to the fruit juices, which are only sweet.
For example, orange juice, blackcurrant juice, sour cherry juice or apple juice tastes sour enough. You should add extra acidity to raspberry juice, strawberry juice or grape juice.

This gummy bears recipe works without gelatin. To make the fruit mixture firm, I use the plant-based gelling agent agar-agar.
The quantities in my gummy bears recipe refer to pure agar powder with gel strength 900. Depending on the gelling power of your agar-agar, you may need to adjust the quantity. For fruit juices with a high acid content, you will also need a little more gelling agent.
How to make healthy gummy bears without sugar
If the sweetness of the fruit juices you use is sufficient, you don’t need to add any additional sweetener. This will give you healthy gummy bears without sugar. Use pure fruit juices with no added sugar.
Optionally, you can use more than just granulated sugar for sweetening. Agave syrup, for example, is also suitable. A fruit syrup, such as the orange syrup or the strawberry syrup, provides even more fruity flavor.
Which molds
To make your own gummy bears, you need small silicone molds. These don’t necessarily have to be bears, but can be any shape you like, such as hearts, fruits or animals. You can also use slightly larger silicone chocolate molds.

- I use agar powder with a gel strength of 900 in the recipe. If your agar-agar has a weaker gelling power, you will need more of it. Also use pure agar powder without additives.
- Gummy bears made from pure fruit juice with no added sugar are firmer in consistency. If you add sugar or another sweetener to the fruit juice, the gummy candies will be softer.
- Gummy candies with a sour note taste best. Add a little lemon or lime juice to sweet juices.

- For more color and flavor, you can add some fruit powder to the fruit juices.
- Store homemade gummy candies in the fridge. They will keep for around 3 – 5 days.

Homemade gummy bears (without gelatin)
Equipment
- candy silicone molds
- pipettes
Ingredients
- 250 ml fruit juice cold
- 3 g agar powder gel starch 900
optional
- sugar to taste
- lemon juice to taste
Instructions
- Pour fruit juice into a small saucepan.
- Dissolve agar powder in it.
- Optional: Add sugar and lemon juice.
- Bring the fruit juice with agar-agar to the boil, stirring constantly, and continue to boil for approx. 1 minute while stirring.
- Quickly pour the fruit juice mixture into the candy silicone molds using a pipette, leave to cool and set for approx. 30 minutes at room temperature or 15 minutes in the refrigerator.
- Carefully remove the homemade gummy candies from the molds.
