White bean dip with walnuts
Ingredients
- 240 g can white beans (drained weight)
- 1 onion medium
- 2 cloves of garlic
- 1/2 bunch parsley
- 5 tbsp vegetable oil
- 50 g walnut kernels
- 2 tbsp lemon juice freshly squeezed
- 1/2 tsp salt or to taste
- 1/3 tsp black pepper or to taste
- approx. 3 tbsp water
Instructions
- Rinse white beans in a sieve with clean water and leave to drain.
- Peel and finely chop onion and garlic. Finely chop parsley.
- Heat 3 tbsp vegetable oil in a pan. Fry the onions and garlic until translucent.
- Add the parsley and fry for approx. 1 minute, stirring constantly.
- Remove the onion mixture from the heat and leave to cool completely.
- Roast walnuts in a frying pan or in the oven and leave to cool.
- Place the white beans, the onion mixture, the walnut kernels, lemon juice, the remaining 2 tbsp vegetable oil, salt and black pepper in a blender and puree to a spreadable consistency. Gradually add water as required to achieve the desired consistency.
- Pour the white bean dip into a glas jar and leave to infuse in the fridge for a few hours or overnight.
