Easy white bread recipe

My white bread recipe is fairly simple and requires just a few ingredients. The yeast dough is quick to prepare. Most of the time is taken up by the rising of the dough.

Replace fresh yeast with dry yeast

I made the white loaf with fresh yeast, just like the whole wheat bread, the hamburger buns, the sweet farmer’s cheese piroshki, the maritozzi and the raspberry Danish mini pastry braids. However, the recipe works just as well with dry yeast. For the quantities below, you will need 6 – 7 grams.

Simply mix the active dry yeast with the flour, knead a yeast dough directly from all the ingredients and leave it to rise for about 1 hour. However, just as with fresh yeast, you can also use dry yeast to make the pre-dough first and then the dough.

Flour

Wheat flour is best for the white bread recipe. I used German type 405 for this. Alternatively, you can use German wheat flour type 550, as for the baguette, pizza dough or mini pizza.

Yeast

I used fresh yeast for the white loaf recipe. However, you can replace it with active dry yeast.

Sugar

A small amount of sugar improves the leavening power of the yeast. In the recipe, a tablespoon of sugar is added to the dough.

Vegetable oil

For even more fluffiness, juiciness and flavor, add a little vegetable oil to the dough. I have used rapeseed oil. Alternatively, you can use olive oil, for example.

  • The amount of flour specified in the recipe may vary. Only add as much flour in portions until you have a soft, slightly sticky yeast dough.
  • Only use lukewarm and room warm ingredients for the dough so that it can rise quickly.
  • Knead the yeast dough thoroughly to make it smooth and less sticky.
  • I used a 25 cm x 10 cm loaf tin for baking.
  • Cover the white bread with baking paper after about 20 – 30 minutes baking time if the surface is getting too brown.

  • 150 g flour
  • 17 g fresh yeast

  • 1 tsp salt
  • approx. 300 g flour
  • vegetable oil to coat the bread
  • vegetable oil for greasing the baking tin, work surface, hands

Instructions
 

Preparation of the pre-dough

  • Dissolve fresh yeast and sugar in lukewarm water.
  • Add flour and mix.
  • Cover the pre-dough and leave to rise in a warm place for 15 minutes.

Preparation of the dough

  • Add salt and flour in portions to the pre-dough and knead into a soft, slightly sticky dough.
  • Knead vegetable oil into the dough.
  • Knead the yeast dough for 8 - 10 minutes, cover and leave to rise in a warm place for 45 minutes.

Preparation of the bread

  • Grease the loaf tin with vegetable oil.
  • Lightly grease the work surface and your hands with vegetable oil and knead the dough briefly.
  • Pull the dough into a rectangle and roll it up from the long side.
  • Pour the dough roll in the loaf tin, cover and leave to rise in a warm place for 20 minutes.
  • Bake the white bread in a preheated oven at 356 °F (180 °C) on the second shelf from the bottom for approx. 40 minutes.
  • Brush the surface of the white loaf with vegetable oil after baking, then take it out of the baking tin and leave it to cool on a wire rack.
