Pasta dough without egg / vegan noodles

Homemade pasta with vegetables and a delicious sauce for lunch - who can say "no" to that! According to this recipe you can make noodles yourself. It's very easy and works even without a pasta machine. The pasta dough recipe is vegan and comes without egg.

Ingredients

  • 300 g flour
  • 300 g durum wheat semolina
  • approx. 300 ml water
  • 20 ml olive oil
  • 1 tsp salt
  • flour for the work surface

Instructions

  • Mix flour, durum wheat semolina and salt in a mixing bowl.
  • Add olive oil and water gradually and knead into a firm dough. Knead the dough for 10 minutes, cover it and refrigerate it for 30 minutes.
  • Dust the work surface with flour, divide the dough into several pieces and roll out one piece thinly first.
  • Dust the rolled out dough generously with flour and roll it loosely into a flat roll.
  • Cut the roll into slices of any width (depending on how wide you want your noodles to be), unfold each slice so you have long strips, and roll the noodles in flour if necessary to keep them from sticking together.
  • Repeat the same with the remaining pieces of dough.
  • Cook the pasta in salted water for about 3 minutes and serve it as you like, for example with a sauce.

Notes

  • Durum wheat semolina can be replaced by the same amount of flour. However, the pasta will then taste softer. For firm pasta, be sure to add durum wheat semolina to the dough.
  • Since the amount of water specified in the recipe may vary, add water gradually to the flour mixture.
  • If the pasta dough is too dry, add a little more water while kneading. If it is too mushy, add some more flour.
  • It is important to roll the homemade noodles generously in flour. Otherwise, they can stick together.

  • Depending on how thick the pasta dough was rolled out, the cooking time listed in the recipe may vary.
