Rice quark casserole with apples

The rice quark casserole with apples tastes creamy, fluffy and fruity. It contains no flour and no semolina. The sweet casserole is ideal for breakfast or dessert. It is easy and quick to make yourself with this recipe.

Equipment

  • Ø 24 cm large baking springform tin

Ingredients

  • 900 g quark
  • 150 g rice raw (sticky type of rice, e.g. round grain rice)
  • 2 medium apples juicy and tart
  • 150 g sugar**
  • 4 eggs
  • 1 pinch of vanilla bean**
  • 1 pinch of salt
  • butter to grease the baking tin

Instructions

  • Line the bottom of the baking tin with baking paper and grease the sides with butter.
  • Cook rice in water and drain thoroughly.
  • Mix quark, the cooked rice, vanilla and salt in a large mixing bowl.
  • Core apples, cut them into small cubes and add them to the rice-quark mixture.
  • Beat eggs and sugar until you have a light and fluffy mixture.
  • Fold the egg-sugar mixture into the rice-quark mixture with apples.
  • Pour the rice quark mixture with apples into the baking tin and smooth it out.
  • Bake the sweet casserole in a preheated oven at 180 °C top and bottom heat for about 45 minutes. (After baking, when it is still hot, it will be wobbly in the middle).
  • Let the rice quark casserole with apples cool a bit in the baking tin, then take it out and dust it with powdered sugar.

Notes

  • The amount of sugar can be adjusted to taste.
  • Instead of ground vanilla, you can also use vanilla sugar or vanilla extract.
  • You can additionally refine the rice and quark casserole with lemon zest, raisins or cinnamon.
  • Do not bake the rice and quark casserole longer than necessary. Use a wooden skewer to check if the sweet casserole is done baking. The wooden skewer should come out with moist quark crumbs.
