The vegan apple bread tastes incredibly moist, fruity, spicy, nutty and so delicious. It is the ideal treat for the fall and winter season. You can refine it with any spices, dried fruits and nuts you like. Use this recipe to make the apple bread at home.

Ingredients
800gapples(approx. 5 medium-sized apples)
150gdried apricots
100gprunes
150gwalnuts
130gsugar
500gflour
50mlrum
15gbaking powder
15gcocoa powder
1tspcinnamon
1/2tspground cloves
1/2tspground star anise
1/3tspnutmeg
1/4tspground vanilla bean
1/2tspsalt
vegan butter for greasing the baking tin
Instructions
Roughly grate the apples and place them in a large mixing bowl with a lid or a large sealable glass container.
Cut dried apricots and prunes into cubes. Coarsely chop walnuts. Add the dried fruits and the nuts to the grated apples.
Add sugar, rum, cinnamon, cloves, star anise, nutmeg and vanilla to the apples.
Stir the apple mixture, seal it and leave it to infuse for approx. 8 hours or overnight. If possible, you can stir it once after about 1 - 2 hours.
Grease the loaf tin thoroughly with vegan butter.
Mix flour with cocoa powder, baking powder and salt.
Add the flour mixture to the apple mixture and mix vigorously to form a homogeneous, thick batter.
Pour the batter into the loaf tin, smooth it out and bake the apple bread in a preheated oven at 356 °F (180 °C) for approx. 1 hour. If the surface becomes too brown during this time, cover it with baking paper.
Leave the apple bread to cool briefly in the baking tin, then take it out and leave it to cool completely on a wire rack.
Notes
Sweet tart apples are best for this recipe.
Use any dried fruits and nuts.
You can adjust the amount of sugar to taste.
Refine the bread with sweet spices of your choice.
You can omit alcohol.
Do not bake the bread longer than necessary so that it tastes moist. Test with a skewer to check whether it is done.
