Sweet, aromatic, fresh apricots and fragrant, spicy rosemary are combined in the soda. This creates a particularly tempting refreshment for hot summer days that is hard to resist. With this recipe you can make the apricot rosemary lemonade at home.
Put sugar and 200 ml of water in a small saucepan and bring to a boil, stirring so that the sugar dissolves before the syrup boils.
Add rosemary sprigs to the sugar syrup, simmer for 1 - 2 minutes and remove from heat.
Let the rosemary syrup cool.
Put apricots and lime juice in a blender and puree it finely.
Pour the apricot mixture through a sieve into a water carafe.
Pour the rosemary syrup through a sieve to the apricot juice in the water carafe.
Pour it with sparkling water and stir.
Serve the apricot lemonade with ice cubes and rosemary sprigs.
Notes
Use ripe, sweet apricots for the recipe.
You can adjust the amount of lime juice to taste.
You can make the apricot soda with non-carbonated mineral water or with tap water. I use sparkling water that comes fresh from the sparkling water maker**.
