Homemade processed cheese spread

The processed cheese spread from farmer’s cheese is so creamy, tender and delicious. It is ideal on bread, for sauces or to refine main courses. With this recipe, you can make your own processed cheese spread with just five ingredients.

Ingredients

  • 400 g farmer’s cheese (tvorog)
  • 80 g butter room warm
  • 1 egg
  • 1/2 tsp baking soda
  • 1/2 tsp salt or to taste

Instructions

  • Put farmer’s cheese, softened butter, egg, baking soda and salt in a small saucepan and blend everything with a hand blender to a homogeneous mixture.
  • Pour some water into a larger saucepan, bring to a boil and turn the heat down to low so that the water simmers gently.
  • Hang the smaller saucepan with the farmer’s cheese mixture over the large saucepan of simmering water so that the bottom of the small saucepan does not touch the water.
  • Heat the farmer’s cheese mixture over the water bath (the water should continue to simmer) for approx. 10 minutes, stirring constantly, until the farmer’s cheese has melted and a smooth, liquid mass has formed.
  • Pour the hot processed cheese mixture through a fine sieve to remove any remaining tvorog grains.
  • Pour the processed cheese spread into screw-top jars, seal and leave to cool.
  • Store the homemade processed cheese spread in the fridge. It is best to leave it at room temperature for a short time before serving. This will make it a little smoother and more spreadable.

Notes

  • Tvorog is available in many supermarkets and Russian stores. You can also make it yourself at home.
  • Baking soda ensures that the farmer’s cheese melts when heated.
