What is tvorog?

Tvorog is a Russian farmers cheese made by fermenting milk and then removing the whey. It has an almost neutral taste, so it can be eaten sweet or salty or used in dishes. Tvorog is somewhat similar to German quark, but is grainy and much drier in consistency.

This milk product is also available in the Czech Republic and Slovakia. Here it is called tvaroh. In Poland it is known as tvarog.

How to make farmers cheese

Farmers cheese recipe with lemon juice

I made tvorog with kefir using the recipe that you can find at the end of this post in the recipe box. To do this, the kefir milk mixture must first rest at room temperature for around 24 hours.

Alternatively, you can make the farmers cheese with lemon juice. Just like for the lemon cake, the lemon crinkle cookies or the lemon ice cream, only use freshly squeezed juice for this.

To make tvorog with lemon, take

  • 1 l milk and
  • 40 ml lemon juice.

The quantities of ingredients will make about 240 g of farmers cheese.

Stir the two ingredients together in a saucepan. The mixture does not need to rest. Heat it slowly for about 40 minutes and stir it briefly about halfway through, just like the kefir milk mixture. Proceed as described in the recipe with kefir below.

Farmers cheese (Tvorog)

Ingredients
  

  • 1 l milk
  • 350 g kefir

Instructions
 

  • Pour milk into a thick-bottomed saucepan and heat to lukewarm.
  • Stir kefir into the lukewarm milk and leave it covered with a towel at room temperature in as warm a place as possible (for example in the kitchen next to the hob) for 24 hours.
  • Then heat the kefir milk mixture (it can still look almost fresh) slowly over a low heat for about 40 minutes, stirring it carefully once after about 20 minutes. As it warms up, milk flakes and whey will gradually form.
  • Leave the milk mixture to cool.
  • Place a sieve on a saucepan and line it with a straining cloth. Pour the milk mixture onto the sieve and allow the whey to drain into the pot.
  • Now wrap the tvorog mixture in the straining cloth and pour it out.
  • Leave the farmers cheese wrapped in the straining cloth in the sieve in the fridge for a few more hours to drain thoroughly.
  • You can pour the whey into glass bottles or screw-top jars and store in the fridge.
