Syrki (Chocolate covered cream cheese bars)

With its taste and consistency, the sweet syrok is reminiscent of a combination of ice cream and cheesecake. You can use this recipe to make the famous chocolate covered cream cheese bar at home based on the Soviet recipe. It is ideal as a small treat, for dessert, as a snack or to take with you on the go.

Equipment

  • Piping bag with wider hole

Ingredients

  • 400 g tvorog or farmer’s cheese
  • 60 g powdered sugar
  • 40 g butter room warm
  • 1 pinch of ground vanilla bean

Instructions

  • Line a cutting board with baking paper.
  • Place tvorog, powdered sugar, soft butter and vanilla in a mixing bowl and blend everything with a hand blender to a creamy, spreadable mixture.
  • Fill the tvorog mixture into a piping bag with a 3 cm diameter hole and pipe approx. 7 cm long "sausages" onto the cutting board.
  • Alternatively, you can moisten your hands with a little water and press the "sausages" slightly flat and rectangular. Or leave them like this.
  • Place the cream cheese bars in the freezer for approx. 3 hours until they are firm.

Preparation of the chocolate glaze

  • Melt chocolate and butter slowly over a water bath while stirring.

Coating the syrki with glaze

  • Briefly and quickly dip the frozen syrki into the chocolate glaze one after the other, remove them with a fork and allow the excess glaze to drip off.
  • Spread the chocolate covered cream cheese bars on a cutting board lined with baking paper and leave to defrost in the fridge for approx. 1 hour.

Notes

  • You can adjust the amount of powdered sugar for the tvorog mixture to taste.
  • You can make your own syrki in different flavors. For example, stir grated coconut, chopped nuts, cocoa powder, dried fruits or poppy seeds into the tvorog mixture. You can also make the cream cheese bar with a filling. Read more about this in the article above.
  • Instead of using a piping bag, you can spread the tvorog mixture on silicone muffin molds and freeze it. This will give you round syrki.
  • You can also leave the syrki in the freezer overnight and only cover them with chocolate glaze the next day.
  • Both milk and dark chocolate are suitable for the glaze.
