You can make the famous chocolate covered cream cheese bar at home based on the Soviet recipe. It is ideal as a small treat, for dessert, as a snack or to take with you on the go. What is syrok?
Syrok (plural syrki) is a small cream cheese bar made from farmer’s cheese or tvorog, sugar, butter and possibly vanilla or other ingredients depending on the flavor. It is covered with chocolate glaze.
Syrki were invented in the Soviet Union, just like the Bird’s milk sweets, the zefir or the famous milkshake, and quickly became very popular. Many supermarkets and grocery stores in the countries of the former Soviet Union still stock them.
In addition to the chocolate covered cream cheese bar, there was also syrok with raisins without a chocolate coating. It was also made from tvorog and had a wide rectangular shape.
Salty syrki were also widespread in the Soviet Union. They were made from processed cheese and also rectangular in shape.
Homemade cream cheese bar instead of store-bought
Although you can buy syrki in many flavors in Russian stores, they now contain much more sugar, flavoring and other unhealthy additives. The situation is similar with the plombir ice cream. So it’s best to make the popular cream cheese bar at home. It’s easy, quick and requires just a few ingredients.
Flavors for syrki
You can make your own syrki in numerous flavors. It is also possible to make them with a filling.
I made the cream cheese bar with vanilla. You can refine the tvorog mixture with, among other things
- grated coconut,
- cocoa powder – for a chocolate flavor,
- chopped pistachios or other nuts,
- dried fruits,
- poppy seeds.
You can also fill the syrok with
- caramel sauce,
- caramelized sweetened condensed milk,
- jam, for example with apricot jam.
To do this, place the tvorog mixture and the filling in a piping bag with a narrow hole. First, pipe a few strips of tvorog close together. Make a strip of filling in the middle of the tvorog strips. Then cover the filling with the tvorog strips.
Where can I get tvorog?
You can easily make your own tvorog from just two ingredients. You can also find the farmer’s cheese in Russian stores.
How to store syrki?
Store the homemade syrki in a food storage container in the fridge. They will keep for around 3 – 4 days.
You can also freeze the cream cheese bars for several weeks. To do this, pack them in a freezer bag or a suitable freezer container after the chocolate glaze has set. You can place baking paper between the syrki to make it easier to remove them individually later. Leave the cream cheese bars to defrost in the fridge for a few hours before serving.

Syrki (Chocolate covered cream cheese bars)
Equipment
- Piping bag with wider hole
Ingredients
- 400 g tvorog or farmer’s cheese
- 60 g powdered sugar
- 40 g butter room warm
- 1 pinch of ground vanilla bean
for the chocolate glaze
- 150 g dark chocolate
- 20 g butter
Instructions
- Line a cutting board with baking paper.
- Place tvorog, powdered sugar, soft butter and vanilla in a mixing bowl and blend everything with a hand blender to a creamy, spreadable mixture.
- Fill the tvorog mixture into a piping bag with a 3 cm diameter hole and pipe approx. 7 cm long "sausages" onto the cutting board.
- Alternatively, you can moisten your hands with a little water and press the "sausages" slightly flat and rectangular. Or leave them like this.
- Place the cream cheese bars in the freezer for approx. 3 hours until they are firm.
Preparation of the chocolate glaze
- Melt chocolate and butter slowly over a water bath while stirring.
Coating the syrki with glaze
- Briefly and quickly dip the frozen syrki into the chocolate glaze one after the other, remove them with a fork and allow the excess glaze to drip off.
- Spread the chocolate covered cream cheese bars on a cutting board lined with baking paper and leave to defrost in the fridge for approx. 1 hour.
