What is snickers made of, and how does it go vegan?
Snickers consists of a caramel layer with peanuts, as well as a nougat like layer, and is covered in chocolate. To make snickers yourself, you must first prepare the two layers, let them set, then cut them into bars and cover them with chocolate.
For the vegan snickers, the regular caramel layer is replaced with a layer of date caramel with peanuts. The nougat layer here consists of an oatmeal base. The vegan snickers is coated with vegan dark chocolate.
How to make snickers vegan or the original yourself?
If you love the original, you should follow the recipe for the regular snickers. But if you don’t like the overly sweetness of the regular snickers, and it’s way too much sugar for you, then the vegan alternative is just right for you. For the snickers recipe you need salted peanuts, of course. They absolutely have to be salted so that your snickers doesn’t just taste sweet later. You also need cream, butter, sugar and water for the caramel layer.
For the nougat layer you need sugar, honey and egg whites from eggs.
And to coat the bars, you’ll need dark chocolate and some coconut oil.
How to make snickers: this is how it works
- For the caramel layer, boil sugar with water to make caramel. Then add butter first and then cream. Then add peanuts. Spread the caramel layer in a baking pan lined with baking paper and let it cool down a bit.
- For the nougat layer, cook honey with sugar to caramel. At the same time, beat the egg whites until stiff. Then add the hot caramel to the egg whites in a thin stream and continue beating. Spread the nougat layer on top of the peanut-caramel layer and chill for a few hours. Then cut the set mixture into bars.
- To coat, melt chocolate with coconut oil. Dip each Rigel in it and let dry. Your snickers is ready!
How to make Snickers yourself: tips and tricks
- When making the peanut caramel layer, make sure that when you boil sugar in water, the caramel turns a light caramel like color. It should not get too dark or even burn. If it gets too dark, your peanut caramel layer might taste too firm later in finished snickers. If it burns, it could taste bitter later.
- Peanuts for the snickers bar need to be salty.
- To make the peanut caramel chocolate bars yourself, you’ll need an approximately 23 x 13 cm loaf pan.
- Be sure to line the loaf pan with baking paper to make it easier to get the snickers mixture out after it sets.
- Use a sharp knife to cut the solidified mass into bars.
- You can also cut the mixture into smaller bars depending on your taste and not necessarily by snickers size.
- Store the homemade peanut caramel chocolate bars in the refrigerator. They will keep for about 1 week.

for the caramel layer
- 200 g salted peanuts
- 100 g cream
- 190 g sugar
- 30 g butter
- 90 ml water
for the nougat layer
- 80 g honey
- 220 g sugar
- egg white of 2 eggs
for coating
- 150 g dark chocolate
- 1 tsp coconut oil
Instructions
Preparation of the caramel layer
- Spread sugar evenly on the bottom of a coated pan, pour water over it and cook it until the mixture turns a light caramel like color, stirring it occasionally. Make sure the mixture doesn't get too dark. (Be sure to follow the tips and tricks for making your own snickers at the top of this post).
- Quickly add butter and stir until butter is melted.
- Now add cream and stir it again briskly until the mixture becomes homogeneous.
- Add peanuts, stir and remove from heat. Spread the peanut caramel mixture quickly on the bottom of the loaf pan lined with baking paper and let it set a bit while you prepare the nougat layer.
Preparation of the nougat layer
- Put honey in a small saucepan with a thick bottom and heat it.
- Add sugar to the honey and cook it until the sugar dissolves and the mixture gets a caramel like color.
- While the caramel with honey is boiling, whip the egg whites in parallel to make fluffy egg whites.
- Add the hot caramel with honey from the saucepan to the egg whites in a thin stream, without stopping to beat it. Beat it to a gooey nougat mixture and immediately spread it on the peanut caramel layer in the loaf pan. Place baking paper on top of the nougat layer so that the baking paper is in contact with the nougat surface, and refrigerate the loaf pan with the two layers for a few hours or overnight.
Preparation of the chocolate layer
- Melt the dark chocolate and coconut oil together.
- Get the peanut caramel nougat mixture out of the loaf pan along with the baking paper, then remove the baking paper and cut the peanut-caramel nougat mixture into about 7 bars about the size of snickers.
- Dip each bar in the melted chocolate, spread the bars on a sheet of baking paper and let the chocolate dry. Then place the snickers in the refrigerator for about 30 minutes.
Notes
- Do not let caramel mixture get too dark or burn.
- Use only salty peanuts.

For the date caramel you need salted peanuts, just like for the original. Add soft dates, peanut butter and agave syrup. Instead of soft dates you can use normal ones and soak them in hot water to soften them. Instead of agave syrup you can also use maple syrup.
For the oatmeal layer, which takes over the role of the nougat layer, you need tender oatmeal or oat flour. Then you’ll need plant milk. I had used lupin drink. But you can use a milk alternative to your taste. Add to that shredded coconut, agave syrup and a small amount of coconut oil, melted beforehand.
To coat the vegan peanut caramel chocolate bar, you’ll need dark chocolate and coconut oil.
How to make vegan peanut caramel chocolate bars: here’s how to do it
- For the oatmeal layer, grind oatmeal into flour, add plant milk, agave syrup, shredded coconut and melted coconut oil, mix and let sit briefly to firm up the mixture. Then spread the mixture evenly on the bottom of the loaf pan lined with baking paper and press firmly.
- For the date caramel, puree dates together with peanut butter and agave syrup, add peanuts and mix. Spread the date caramel on the oatmeal layer in the loaf pan and chill for a few hours. Then cut into bars.
- Then melt dark chocolate with coconut oil and coat the bars with it. Ready is the delicious vegan peanut caramel chocolate bar!
Snickers vegan: DIY tips and tricks
- Instead of soft dates you can also use normal ones. Just pour hot water over them beforehand, let them steep for about 10 minutes and then drain them thoroughly.
- It is best to use homemade plant milk, for example almond milk, coconut milk or soy milk. You can also use cow’s milk if you don’t necessarily want the peanut caramel candy bar to be vegan.
- Instead of agave syrup, you can use maple, coconut blossom or rice syrup, among others.
- Instead of grinding oatmeal, you can use ready made oat flour.
- If you want your vegan snickers to be gluten free, use gluten free rolled oats.
- Make sure your dark chocolate is vegan. If it’s not specifically labeled as such, just look at the ingredient list.
- If you want to make the peanut caramel chocolate bar completely without industrial sugar, make sure your dark chocolate for coating and peanut butter are sugar free.
- Peanuts for the vegan snickers should be salty.
- You’ll need a high powered blender to puree the date mixture.
- To make the vegan snickers, you’ll need a loaf pan measuring about 23 x 13 cm.
- Be sure to line the loaf pan with baking paper. This makes it easy to remove the vegan snickers mixture after cooling.
- Use a sharp knife to cut the solidified vegan mass into bars.
- You can also cut the vegan mass into smaller bars according to your taste and not necessarily according to the snickers size.
- Store the homemade vegan snickers in the refrigerator. They will keep for about 2 weeks.
- You can also freeze the vegan peanut caramel chocolate bars and let them thaw before snacking.

- 90 g peanut butter
- 40 ml agave syrup
for the "nougat" layer
- 120 ml vegetable milk (e.g. almond, oat, coconut drink)
- 90 g tender oat flakes
- 50 g coconut flakes
- 20 ml agave syrup
- 1 tbsp coconut oil (melted)
for coating
- 150 g dark chocolate (vegan)
- 1 tsp coconut oil
Instructions
Preparation of the "nougat" layer
- Grind oatmeal finely and put it in a mixing bowl.
- Add plant milk, agave syrup, coconut flakes and melted coconut oil, mix until homogeneous and let it rest for about 10 minutes. The mixture should be easily malleable, not too dry and not runny.
- Spread the oatmeal mixture evenly on the bottom of the loaf pan lined with baking paper and press it down.
Preparation of the "caramel" layer
- Puree dates together with peanut butter and agave syrup with a stand or hand blender until homogeneous.
- Put the date mixture in a mixing bowl, add peanuts and mix.
- Spread the date mixture with peanuts evenly on the oatmeal layer in the loaf pan. Put baking paper on the date layer so that the baking paper is in contact with the surface of the mass, press the mass a little and refrigerate the loaf pan with the two layers for a few hours or overnight so that it becomes firm.
Preparation of the chocolate layer
- Melt the dark chocolate and coconut oil together.
- Get the peanut date oatmeal mixture out of the loaf pan along with the baking paper, then remove the baking paper and cut the mixture into about 7 bars about the size of snickers.
- Dip each bar in the melted chocolate, spread the bars on a sheet of baking paper and let the chocolate dry. Then place the vegan peanut caramel chocolate bars in the refrigerator for about 20 minutes.
Notes
- Instead of soft dates go normal, if they are previously soaked in hot water.
- Instead of agave syrup, use maple, coconut blossom or rice syrup.
- Use only salty peanuts for the vegan snickers.
