How to make vegan cinnamon stars: tips and tricks
- You can adjust the amount of powdered sugar for the dough according to your taste. Since the dough is without eggs and without flour, you can simply try it raw to find out if it is sweet enough for you.
- Instead of lemon juice, you can use orange juice for the dough. Lemon zest would also work instead of orange zest.
- Depending on the size of your cookie cutter, you may end up with more or less Christmas cookies.
- Do not bake the cookies too long. After baking, they should be very soft, and their color barely darker than before baking.

Vegan cinnamon stars
Equipment

Ingredients
- 200 g ground almonds
- 150 g ground hazelnuts
- 100 g powdered sugar
- 10 g cinnamon
- zest of 1 organic orange
- 10 ml freshly squeezed lemon juice
- 50 ml cold water
- 1 pinch of salt
- ground almonds for sprinkling and rolling

- 100 g powdered sugar
- approx. 15 ml freshly squeezed lemon juice
Instructions
- Mix ground almonds, ground hazelnuts, powdered sugar, cinnamon, orange zest and salt in a mixing bowl.
- Add lemon juice and water and knead into a sticky dough. Shape the dough into a ball, flatten it, wrap it airtight and put the dough in the refrigerator for 1 hour.
- Sprinkle a sheet of baking paper with ground almonds, place the dough on it and cover it with a second sheet of baking paper. Roll out the dough between the two sheets of baking paper to a thickness of about 0.7 cm.
- Using a star cookie cutter, cut out stars from the dough, rolling the mold repeatedly in ground almonds, and spread the stars on a baking sheet lined with parchment paper.
- Bake the cinnamon stars in a preheated oven at 200 °C top and bottom heat for about 10 minutes and let them cool.
Making the glaze
- Put powdered sugar in a mixing bowl and gradually add lemon juice until you have a thick, glossy white glaze.
