The Lazy Napoleon cake is a quick version of the popular Russian classic. Instead of cake layers, the recipe uses palmier cookies. Thus, this no bake cake is ready in no time. Napoleon cake without baking

For this quick Napoleon cake, you don’t need to bake any cake layers. Instead, use puff pastry cookies. I used pig ear cookies for this recipe.

Both ready-made puff pastry cookies from the supermarket and homemade cookies are suitable for the Napoleon cake. Maybe you once made the Palmier cookies and have leftovers.

Quick alternative to the sweet classic

You love the Russian Napoleon cake, but don’t always have time for its elaborate preparation? Then this quick recipe is just the thing for you. You don’t even need an oven with this one, just like you did for my waffle cake, the chocolate sausage, and the vegan avocado pie.

All you have to do is make the vanilla pudding cream, similar to what you did for the cake “Vesna”, and layer it with the pig ear cookies. Already your Lazy Napoleon cake is ready. It should only cool for a while and soak in peace.

If you have a little more time to prepare the Lazy Napoleon cake, you can use ready-made puff pastry from the supermarket for the recipe instead of cookies.

First bake the pastry according to the instructions on the package. When it has cooled down, spread the cream layer by layer.

Quick Lazy Napoleon cake recipe

The Lazy Napoleon cake recipe, which you can find here at the end of the post in the recipe box, is very simple and lightning fast. It doesn’t require rolling out and baking the many thin cake layers. The only thing that takes time is letting the cake sit in the fridge.

Step 1:

To make the cream, whisk eggs with sugar in a saucepan. Then add cornstarch and milk. Boil the mixture briefly until it becomes a pudding and then stir in butter and vanilla. Let the cake cream cool down to lukewarm.

Step 2:

Now, in a cake ring, alternate pig ear cookies and the cream. Sprinkle the outside of the cake with crumbled puff pastry cookies.

Step 3:

Now place the cake in the refrigerator for at least 4 hours. After that you can cut it.

Ingredients

  • 800 ml milk
  • 2 eggs
  • 100 g sugar
  • 60 g cornstarch
  • 80 g butter
  • 1 pinch of ground vanilla bean

Instructions
 

Preparation of the cream

  • Thoroughly whisk eggs and sugar in a thick-bottomed saucepan.
  • Add cornstarch and mix until homogeneous without lumps.
  • Pour in milk and stir again.
  • Place the saucepan on the stove, bring the mixture to a boil over medium heat, stirring as it turns into a pudding, and simmer for 2 - 3 minutes, stirring constantly.
  • Take the pudding off the heat, add butter cut into pieces and vanilla and stir it until the butter is melted.
  • Let the cake cream cool to lukewarm, stirring occasionally.

Preparation of the cake

  • Place the cake ring on a cake plate. Layer puff pastry cookies and the cream alternately in it, with the last layer being from the cream.
  • Crumble the remaining cookies and sprinkle over the top of the cake, leaving some of the crumbs for the sides of the cake.
  • Refrigerate the cake in the cake ring for at least 4 hours.
  • Then carefully remove the cake ring and sprinkle the sides of the cake with the remaining cookie crumbs.
