In this case, however, the shelf life of the syrup will be shortened. You can also make strawberry syrup with honey and without sugar. Then you should not boil it a second time after adding honey. Strawberry syrup without sugar has a short shelf life. You should store it in the refrigerator and use it as soon as possible.

  • 500 g strawberries cleaned
  • 500 g sugar
  • freshly squeezed juice of 1 lemon

Instructions
 

  • Quarter or halve strawberries and put them in a saucepan.
  • Add lemon juice and sugar to the strawberries, stir and let it steep for 30 minutes, stirring occasionally.
  • Place the saucepan on the stove, bring the strawberry mixture to a boil, stirring occasionally, and simmer for 10 minutes.
  • Pour the strawberry mixture through a strainer and catch the liquid in a bowl.
  • Return the strawberry liquid to the saucepan, bring to a boil, and simmer for 2-3 minutes.
  • Take the strawberry syrup off the heat, immediately pour it into sterilized glass bottles and seal them. Let the syrup cool down.
