Various Fruits Can Be Used

This sweet galette can be made with various fruits, just like the yeast cake with cream cheese or the cottage cheese breakfast bake. That way, you can enjoy a different flavor every time. Just use whatever fruit is in season.

In the summer, fresh berries are ideal for this recipe. I use raspberries, blueberries, and red currants. I’ve also baked the fruit galette with black currants, just like the lemon berry bars or the berry quark bundt cake.

In addition, just like the sheet cake with yogurt or the fruit sour cream tart, you can fill it with strawberries, cherries, blackberries, apricots, and peaches. Cut the larger fruits into pieces.

In the fall, the sweet galette tastes delicious with plums, apples, just like the Buchty do, or pears. For extra flavor, add a little cinnamon to the sugar starch mixture.

Vegan Berry Galette

Just like the strawberry cookies, this fruit galette is very easy to make vegan. To do this, simply replace animal-based butter with a plant-based butter alternative. Instead of yogurt made from cow’s milk, use vegan yogurt, such as soy yogurt.

How to Serve and Store

Along with the Fraisier Cake and the strawberry meringue cake, the berry galette is an ideal summer dessert to serve after a meal. You can also make it for a garden party.

The fruit galette tastes delicious on its own or dusted with powdered sugar. It pairs well with a scoop of vanilla ice cream or a dollop of whipped cream.

The berry galette tastes best fresh, on the day it is baked. That is when the shortcrust pastry is really crispy. Store any leftovers in an airtight container in the refrigerator and eat them the next day if possible.

How to Make Berry Galette: Tips and Tricks

  • Use cold ingredients for the dough.
  • The amount of yogurt listed may vary. Add it to the dry ingredients a little at a time until you have a shortcrust pastry dough that is neither dry nor mushy.
  • Knead the dough only briefly until it has a roughly uniform consistency. It must not get warm. The longer you knead it, the more additional flour it may absorb, as the butter will melt.
  • This sweet galette can be made with various fruits. Remove the pits from the fruit depending on the variety and, if necessary, cut it into cubes or slices.
  • You can adjust the amount of sugar for the filling to your taste. Keep in mind that the more sugar you add, the more liquid may form during baking.
  • You can also add cinnamon or vanilla to the sugar starch mixture for the filling and the cane sugar for the edge for extra flavor and aroma.
