The homemade lemon ice cream tastes incredibly creamy, smooth, delicate, fresh and delicious. It is a pure refreshment on hot summer days. Here I show you how to make this lemon ice cream with only three ingredients and without egg. This is very easy and without an ice cream maker. A detailed lemon ice cream recipe with exact quantities and step-by-step instructions can be found below.
Heavenly creamy and refreshing
This ice cream tastes heavenly creamy. It is probably the creamiest ice cream I have ever tasted. It owes its consistency to cream and also to the sweetened condensed milk used to sweeten it instead of sugar.
At the same time, the ice cream is very fresh in taste thanks to lemon. On hot summer days, along with lemonade and Soviet milkshake, it is simply pure refreshment.
Make sweetened condensed milk yourself
The best way to make the ice cream is to make sweetened condensed milk yourself. You only need two ingredients. So you know exactly what ingredients are in your ice cream. You can then do without the additives that are often contained in the sweetened condensed milk from the supermarket.
Use freshly squeezed lemon juice
Use only freshly squeezed lemon juice for the lemon ice cream recipe, just as you would for homemade lemon iced tea. This will make the ice cream especially refreshing and aromatic.
You can adjust the amount of lemon juice according to your taste. Use a slightly larger amount if you like more lemon flavor. Don’t overdo it with the juice, though. If you add too much liquid to the ice cream, it will lose its creamy consistency.
With or without ice cream maker
You can easily make this ice cream without an ice cream maker. You only have to stir it once, after it has been in the freezer for about an hour.
Of course, you can also make the ice cream in an ice cream maker. Then put the lemon cream mixture into the machine and wait for it to do its work.
