The history

Crazy Cake, also known as Wacky Cake and Depression Cake, is an old American recipe. It was invented in the 1930s when food was scarce and expensive in America.

A cake was created from very simple and few ingredients, without eggs, butter and milk. This is how a vegan chocolate cake was accidentally created.

The ingredients that bring out its flavor are cocoa powder, salt, vinegar and baking soda. According to the original recipe, the batter is stirred directly in the baking tin.

This Crazy Cake has an incredibly moist consistency, similar to my vegan nut cake and my vegan lemon cake. No one is guaranteed to notice that the chocolate cake is made without eggs, milk and butter, it tastes so delicious. It can therefore more than hold its own with my delicious but non-vegan chocolate banana bread, chocolate pear cake and zucchini brownies.

Heavenly chocolatey without chocolate

The Crazy Cake tastes heavenly chocolatey. But it contains no chocolate at all, just cocoa powder.

It is important that you only use good quality unsweetened baking cocoa without additives for the recipe, just like for the chocolate pryaniki or the sugar free chocolate candy bars. This is because it determines the taste of the eggless chocolate cake.

If you feel like it, you can also cover the Depression Cake with chocolate glaze. To do this, melt vegan chocolate together with a little vegetable oil or coconut oil. If the chocolate glaze doesn’t have to be vegan, you can prepare it as in the recipe for the cake “Ptichka” or for the chocolate cream cake, for example.

Alternatively, you can simply dust the vegan chocolate cake with powdered sugar and serve with fresh fruit, similar to the flourless chocolate cake.

Super quick vegan chocolate cake

The vegan chocolate cake recipe, which you can find in the recipe box at the end of this post, is really easy. Preparation is lightning fast. What’s more, you only need a few common ingredients that you probably already have at home.

Step 1:

First, mix together all the dry ingredients, namely flour, sugar, cocoa powder, baking soda, salt and vanilla.

Step 2:

Now you add the liquid ingredients, namely vegetable oil, water and vinegar essence, and mix it into a thick chocolate batter.

Step 3:

Pour the batter into the springform tin and bake the eggless chocolate cake for around 35 minutes.

How to make Depression Cake: tips and tricks

  • Only use unsweetened baking cocoa without additives for the recipe.
  • You can adjust the amount of sugar to taste. With the amount of sugar specified in the recipe, the Depression Cake tastes moderately sweet.
  • The batter for the Crazy Cake has a more liquid consistency than the batter for a normal pound cake, such as the vegan applesauce cake.
  • Do not bake the eggless chocolate cake longer than necessary so that it tastes moist and not dry. Test with a skewer to check whether it is done baking.

  • 240 ml water room warm

  • 180 g flour
  • 75 ml vegetable oil
  • 40 g cocoa powder
  • 6 g baking soda
  • 1 tsp vinegar essence (25 % acid, food grade)
  • 1/2 tsp salt
  • 1 pinch of ground vanilla bean

Instructions
 

  • Line the base of the springform tin with baking paper.
  • Mix sugar, flour, cocoa powder, baking soda, salt and vanilla in a mixing bowl.
  • Add vegetable oil, water and vinegar essence and mix with a whisk to form a thick chocolate batter.
  • Pour the batter into the springform tin.
  • Bake the vegan chocolate cake in a preheated oven at 356 °F (180 °C) for approx. 35 minutes.
