These sweet oatmeal bars taste crunchy, light and slightly fruity. They are filled with jam, vegan and contain no wheat flour. You only need four main ingredients to make them. Vegan oatmeal bars without wheat flour

You don’t need wheat flour for this recipe, just like for the vegan banana muffins with chocolate chips. In fact, the oatmeal base is just oatmeal.

What’s more, all the ingredients you need for the recipe are purely plant-based. Thus, the sweet oatmeal bars are also suitable for vegans.

Which jam for the filling?

I filled my oatmeal bars with homemade apricot jam this time. They have also turned out delicious for me with a strawberry jam.

The vegan oatmeal bars taste best with a sour jam. Because it perfectly complements the crispy sweet oatmeal base.

You can make them with rhubarb jam or strawberry rhubarb jam, among other things. Also the blackcurrant jam, with which I have made the vegan nut chocolate jam loaf cake and the vegan jam cookies, is ideal for this.

Experiment with filling

By the way, you can experiment with the filling and use something else instead of jam. For example, a nut puree or a nut nougat cream goes very well with it. However, do not spread it on the oatmeal base until it has cooled down.

You can also make a fruit jelly beforehand, as I did for my strawberry roll cake, raspberry cream cheese cake or raspberry Danish mini pastry braids, and fill the oatmeal bars with it.

For breakfast, dessert or on the go

These jam oatmeal bars are perfect for breakfast for those who like a sweet start to the day.

They are also delicious for dessert after a meal with a cup of coffee, tea or a glass of cold (plant) milk.

Plus, you can snack on the jam filled oatmeal bars in between meals instead of or in addition to regular cookies, like snowflake cookies, vegan coconut cookies with chocolate or angel eyes cookies.

They are ideal to take with you on the go. For example, you can pack them as a snack to work, university or hiking.

The jam oatmeal bars recipe you’ll find here at the end of the post in the recipe box is very simple. You only need four main ingredients for it. They are rolled oats**, vegan butter, sugar and for the filling any jam.

First, you knead a firm dough from the ingredients and roll two oatmeal bases out of it. After they have chilled in the fridge for about an hour, bake them for about 15 minutes.

Now, spread one of the oatmeal bases with jam and place the second oatmeal base on top. After the cake has cooled, cut it into bars.

  • You can adjust the amount of sugar to taste.
  • Don’t roll the oatmeal bases too thin, or they might break after baking.
  • Be very careful with the hot oatmeal bases, because they are quite fragile.
  • You can use any solid jam for the recipe. The bars taste best with a sour jam.

Jam oatmeal bars vegan

Ingredients
  

  • 300 g rolled oats**
  • 200 g vegan butter or margarine cold
  • 100 g sugar** or to taste
  • approx. 20 ml water
  • 1 pinch of salt

for the filling

  • 130 g jam solid

Instructions
 

  • Mix rolled oats, sugar and salt in a mixing bowl.
  • Cut butter into small pieces and add to the oat mixture.
  • Quickly knead the oat mixture into a dough, adding a little water as needed.
  • Divide the dough into two equal pieces.
  • Roll out each piece of dough between two sheets of baking paper, each about 4 - 5 mm thick, to form two rectangles of equal size.
  • Place the two oatmeal bases side by side together with the baking paper on a baking tray.
  • Refrigerate the baking tray with the oatmeal bases for 1 hour.
  • Remove the top sheets of baking paper, bake the two oatmeal bases in a preheated oven at 392 °F (200 °C) for about 15 minutes and let them cool to warm on the baking tray.
  • Carefully spread one of the oatmeal bases with jam, turn the second oatmeal base on top and let the oatmeal cake cool completely.
  • Cut the oatmeal cake into bars.
