This kartoshka is a quick version of the popular Russian sweet potatoes. It is prepared from butter cookies and without an oven. The mini cakes taste crumbly, chocolatey and fluffy. This no bake kartoshka recipe is a great way to use up leftover cookies that no one wants to eat anymore. Instead of throwing them away, you’ll turn them into delicious mini cakes that no one is guaranteed to resist.
For the recipe you can use any butter cookies or shortbread cookies. You can use supermarket cookies or homemade ones, such as Scottish shortbread.
If you use chocolate-flavored cookies, like the chocolate pine cone cookies, omit cocoa powder from the recipe.
Refine cookie mass
Just as with the kartoshka made from rusk, you can also refine the cookie mass with various ingredients, such as nuts, spices, alcohol. In this way, you can give a special flavor to your mini cakes.
For example, you can add walnuts, peanuts, almonds or hazelnuts to the cookie mixture. You can also add vanilla or cinnamon. Instead of rum you can use cognac.

Unlike the classic kartoshka according to GOST or the chocolate kartoshka, you don’t need to make a sponge cake here. In less than 30 minutes you can have the mini cakes on the table. It’s just best to chill them for a while before serving.
First, finely crumble butter cookies and mix them with cocoa powder. Mix softened butter, sweetened condensed milk and a little alcohol.
Now add the butter mixture to the cookie mixture, so that a well moldable mass, like for cake pops, is created.
Form “potatoes”, roll them in a mixture of ground cookies and cocoa powder and chill them for about an hour.
How to make kartoshka from cookies: tips and tricks
- You can use any butter or shortbread cookies for the recipe.

- 130 g butter room warm
- 50 g cocoa powder
- 2 tbsp rum
for rolling
- 20 g butter cookies
- 10 g cocoa powder

- 5 g sweetened condensed milk
Instructions
- Grind butter cookies finely.
- Mix the ground butter cookies with cocoa powder.
- Mix softened butter, sweetened condensed milk and rum.
- Add the butter mixture to the cookie mixture and mix until it is homogeneous and easy to shape.
- Shape the mixture into "potatoes".
- Grind butter cookies finely, mix them with cocoa powder and roll the kartoshka mini cakes in it.
- Mix softened butter and sweetened condensed milk with a fork.
- Put the butter mixture into a piping bag and pipe "sprouts" from it onto the "potatoes".
- Refrigerate the kartoshka mini cakes for at least 1 hour.
