Fruity, refreshing and very tasty is this fresh compote. Not without reason it has been one of the most popular Russian summer drinks for ages. You can make it in any flavor by using different fruits. A detailed Russian kompot recipe with exact quantities and step-by-step instructions can be found below.

What is kompot?

Kompot is a sweet fruit drink of Slavic, including Russian cuisine. It consists of water, fruit and sugar. The drink is made of various seasonal fruits, either whole or cut. It is drunk chilled or warm. It is prepared mainly in summer.

In Russia there are two common ways of preparing the drink.

For the fresh kompot, fruits are boiled very briefly in water with sugar. After cooling down, the drink can be enjoyed immediately. Each family has its own recipe, which may differ from the others.

For the pickled compote, distribute some fruit and sugar among large canning jars** and pour a generous portion of boiling water over them. The preserved drink has a long shelf life and is popular to serve in winter when fresh fruit is not available.

What fruits for fresh compote?

For the recipe you can take any fruits and berries. Even with a mixture of different fruits, the drink tastes delicious.

In Russia, fresh kompot is made in summer from fruits that you just have in your own garden. Depending on the season, it is apples, pears, strawberries, cherries, raspberries, apricots, plums, cornel cherries, currants, gooseberries, quinces.

You can also make it from the fruit that doesn’t look so good anymore and that nobody wants to eat. So the recipe is a great way to use up fruit that needs to go quickly so it doesn’t end up in the trash.

I made the drink using apples, apricots, strawberries, raspberries, blackberries and blueberries.

By the way, in winter you can make the compote from frozen fruits. So you can enjoy the fruity drink at any time of the year.

The amount of sugar is taken according to taste. It also depends on how sweet the fruits are, from which the drink is made.

Alternatively, you can prepare Russian kompot completely sugar free. In this case, you should consume it a little faster. Sugar is also responsible for the shelf life of the drink.

Refining with spices

You can refine Russian compote with various spices. For example, add a cinnamon stick or cloves. The drink also tastes delicious with vanilla or mint flavor.

Cooked fruit for dessert

You should not dispose of the cooked fruits from the kompot. Because they taste very tasty and pass perfectly as a fruity dessert, reminiscent of the famous Austrian compote.

Even at home, the drink could not be missing in the summer. After all, one always had a large selection of fruits in one’s own garden that had to be processed. Thus, in addition to jams, such as strawberry jam, apple jam or blackcurrant jam, and pickled, one also made fresh compote from it. For children at that time it was their childhood drink.

Still fresh compote is very popular in Russia. In canteens it is still served with main meals.

3-ingredient kompot recipe

The kompot recipe that you can find here at the end of the post in the recipe box is very simple and quick. You only need three ingredients. The drink needs to steep a bit after preparation and possibly be cooled.

First, bring water and fruit to a boil, add sugar and simmer for a few minutes. After that, let it steep for half an hour and then chill it. The Russian summer drink is ready.

How to make Russian kompot: tips and tricks

  • Do not boil the fruit in water for too long. A few minutes are enough.
  • You can adjust the amount of sugar to taste and depending on how sweet your fruits are.
  • Store the fresh compote in the refrigerator. You can drink it up to about three days.

Russian fresh kompot

Ingredients
  

  • 500 - 600 g fresh fruits
  • 100 g sugar** or to taste
  • 2 l water

Instructions
 

  • Wash fruits, core them as needed and cut large fruits, such as apples or pears, into coarse pieces.
  • Put the fruits in a large saucepan and pour water over it.
  • Place the saucepan on the stove and bring the water with the fruits to a boil.
  • Add sugar and simmer, stirring to dissolve the sugar, for 3 - 5 minutes.
  • Take the kompot off the stove and let it steep with the lid on for 30 minutes.
  • After that, let the compote cool completely and put it in the refrigerator for a couple of hours so that it is chilled.
  • Pour the kompot, according to taste through a sieve, with a ladle into glasses and serve.
  • Alternatively, you can drink the compote warm directly after steeping.
