  • The cooking time of potatoes depends on their size.
  • Instead of mashing with a potato masher, you can also press the potatoes through a potato ricer.
  • It is best to leave the mashed potatoes to cool completely before adding potato flour or potato starch. This way, you won’t need too much flour and the dumplings will keep their shape better.
  • Only knead the potato dough briefly and never for too long, otherwise it will become sticky.
  • The salted water in which the vegan German Kartoffelklöße are cooked must not boil rapidly, otherwise the dumplings could fall apart.
  • You can form a test dumpling first and cook it in water. If it falls apart, add some more potato flour to the dough.

Ingredients
  

  • 800 g floury potatoes with skin
  • 120 g potato flour (potato starch)
  • 40 g butter room warm
  • 1 tsp salt or to taste
  • 1 pinch of nutmeg

Instructions
 

  • Boil whole unpeeled potatoes in salted water for approx. 20 - 30 minutes.
  • Pour off the water and leave the potatoes in the saucepan on the hot, switched-off stove for 10 - 15 minutes to evaporate.
  • Then leave the cooked potatoes to cool slightly and peel them.
  • Mash the potatoes with a potato masher.
  • Add softened butter, salt and nutmeg to the mashed potatoes while they are still warm, mix and leave the mashed potatoes to cool.
  • Add potato flour and mix briefly with your hands to form a soft dough.
  • Shape the potato dough into round dumplings (I made 12 dumplings of approx. 70 g each).
  • Bring a large saucepan with plenty of salted water to a boil and then reduce the heat until the water is just simmering.
  • Carefully add the potato dumplings one by one to the simmering water and leave to stand for approx. 10 minutes until they float to the surface.
  • Remove the potato dumplings from the water with a slotted spoon, allowing them to drain well, and serve warm.
